    BG Cooking: The Appetizer Thread

    So I know we have a few food threads, and people will probably cry that there is a new one, but fuck them.

    This thread is for appetizer recipes! Chip dips, tasty treats need apply here! I'm trying to dig up this pepperoni chip dip + buffalo chicken dip recipe now to post in here. I'm looking for anything and everything appetizery! Post your favorites and delicious foods here!

    Pepperoni Pizza Dip:

    8oz package pepperoni, cut in halves
    2 x 8 oz cream cheese, softened
    3/4 cup sour cream
    1 cup pizza sauce
    1 cup mozzarella cheese

    Mix together the cream cheese and sour cream and spread in a pie plate. Spread the pizza sauce on top. Sprinkle the pepperoni and mozzarella cheese on top. Bake at 350 degrees for 15 minutes. Stir all together before serving.

    pretty simple, but so fucking good

    Buffalo Chicken Dip:

    8oz cream cheese, softened
    2 cans (9.75oz) Premium Chunk Chicken Breast, drained (our local grocery store, you can buy buffalo chicken so its a lot more fresh than canned chicken, and thus, a lot better. if you can do this, i recommend it)
    1/2 cup any flavor Frank's red hot sauce (or your favorite brand)
    1/2 cup blue cheese salad dressing
    1/2 cup crumbled blue cheese

    1. Stir cream cheese in deep baking dish until smooth. Stir in remaining ingrediants.
    2. Bake at 350F for 20mins (or until hot + bubbling). Stir. Can be served with vegetables, crackers, and/or tortilla chips.

    Again, easy but good!

    Here's a few quick and easy ones don't have measurements as you can adjust to your own tastes.

    Mini Crab cakes and dip

    Crab cakes:
    Tinned crab meat (1 tin per dozen or so cakes)
    Mayo (I use equal amounts to the crab)
    Chives
    1-2 Eggs
    Breadcrumbs

    Mix the crab, chives and mayo ingredients then form them into balls.
    Coat with egg and roll in bread crumbs until coated.
    Then freeze for about an hour before cooking.
    Can cook either in an oven or a frying pan/skillet.

    Dip:
    Mix lime juice, mayo and chili pepper. Dip done!

    Mini Pizzas:

    Tortilla wraps (I use salsa ones)
    Mozarella cheese
    Sauce (I just mix ketchup and orgeno for the base sauce)
    Toppings (my favourite is chrizzo and mushroom)

    Use a cookie cutter to cut the wraps for the base into the desired size.
    Coat the bases with the sauce.
    Add cheese then toppings and a little more cheese to top off.
    Grill until it's done to your liking.

    Creme Cheese Fingers:

    Naan Bread
    Creme Cheese
    Chili jelly
    Chives

    Combine the creme cheese, chili jelly and chives.
    Cut or break the naan bread into bite sized strips.
    Apply the creme cheese mixture and they're ready to eat.

    All very simple recipes but they all taste really good.

    1 box frozen chopped spinach , thawed and drained
    1 (16 ounce) container sour cream
    1⁄3; cup mayonnaise
    ½ package Knorr vegetable soup mix
    ½ cup cheddar cheese
    ½ cup shredded parmesan cheese (NOT the powdered kind)
    tortilla chips or salsa

    Directions:

    1
    In mixing bowl, stir together spinach, sour cream, mayonnaise, soup mix, and cheeses.

    Transfer to casserole dish.

    Bake at 350 F for 15-17 minutes.

    Serve with tortilla chips and salsa, if desired.


    I made this a week ago and it was really good. I feel like it was really strong-tasting (in a good way), that I would double the vegetable component. Double spinach, or spinach/artichoke (as is popular.)

    simple dip, but fucking delicious:

    1 bar cream cheese
    1 can refried beans (I get the kind that has green chilies in them)
    1 jar medium salsa
    1 package shredded mexican/taco cheese (2 cups size)

    basically layer them up in a casserole dish in that order (cream cheese on bottom, usually stick in a microwave for a minute to make it easier to spread). Stick it in an oven at like 400 degrees until the cheese is bubbly on the top.

    Eat with nacho chips.

    Soooooooo yummy

    Here's 2 more recipes. One isn't really an appetizer, more party food, but I normally make both together.

    Wedges & Dip

    Large potato (1 per person)
    Mayo
    Ketchup
    Cayene
    Tumeric
    Paprika
    Parsley
    Lemon juice (juice of half a lemon)

    Cut potato into wedges then par boil. Roast in the over on a medium heat until golden. You can also season them if you like but they don't really need it with the dip.

    For the dip combine the other ingredients in a bowl then chill until serving.

    Steak Hotdogs

    1 Large Steak (makes about 6)
    6 Hotdog buns or similar bread rolls (ones that aren't cut through fully work best, cut large rolls/buns in half)
    1 Large onion
    1-2 cups of sliced mushrooms
    1 tsp of worcestershire sauce
    pinch of salt
    Garlic powder or 1 fresh clove crushed
    Butter or low fat spread
    Lemon juice (other half of lemon)
    Fresh herb (parsley, thyme or basil will work well with beef)
    Lettuce (optional)

    Finely chop the onion and put it & the butter in a pot/pan on a low heat.
    Depending on the cut of steak you might want to tenderise it.
    Season the steak to your liking (really no seasoning is required beyond a little salt & pepper)
    Cut steak into bite size pieces.
    Brown the streak and the mushrooms in a pan.
    When the onion are translucent add in the garlic, worcestershire sauce, salt & lemon juice.
    Once the steak and mushrooms are ready add those in and simmer for 5-10 minutes.
    1 minute before serving stir in the fresh herb.
    Line the bun with lettuce and then fill with the steak, mushroom & sauce.

    yea, party food here works too. i made that pepperoni dip tonight, double the recipe (cept the pepperoni, cuz there was already a shitton) and theres none left

    Reallyreallyreally simple chicken quesadillas:

    Couple lbs chicken breasts, seasoned with something like a cajun spice mix, sliced thinly
    shredded cheese - I use cheddar
    flour tortillas
    taco bell jalapeno sauce (shit is good!)

    Scoop about a spoonful of sauce onto a tortilla then spread around evenly
    Sprinkle cheese on (it'll stick to the sauce)
    lay chicken slices on half of the tortilla, then fold over
    cook on a griddle or in a large frying pan 2 at a time

    Top with sour cream.

    Also, my version of the buffalo chicken dip:

    1 package cream cheese
    1 8oz bottle of ranch
    1 can of chunk chicken
    1 1/2 cup shredded cheese
    1/2 cup texas pete or franks redhot

    Soften cream cheese before you start to make life a little easier (ie, just leave it on the counter for an hour)
    Dump cream cheese and ranch and hot sauce in a large frying pan. Whisk until smooth. Add chicken and stir some more. Add 1 cup cheese.
    Pour this into a small crock pot (appetizer size) and top with remaining cheese.
    Leave the crock on "stay warm" setting and leave a bag of Scoops chips next to it.

    When you run out of chips, people will grab the next available thing. Most of the time this is a sandwich bun. Mmhhh buffalo chicken sandwich.

    My favorite party food recipe is cheesecake stuffed strawberries, easy and a great counterpoint to all the more savory options.

    cheesecake strawberries
    2lbs stawberries
    1 8oz pack of cream cheese
    1/2 cup powdered sugar
    1/2 tsp vanilla
    3 large graham crackers, crushed

    1) cut off top of strawberry and hollow inside
    2) mix together cheese, vanilla, and sugar
    3) pipe into strawberries
    4) dip cut end into crushed graham crackers.

    Other favorites would be:

    cocktail weenies -- simmer 1 cup grape jelly + 1 cup chili sauce with weenies until nice and syrupy

    cocktail meatballs -- precook meatballs (or buy frozen), simmer 1 cup ketchup + 1 cup gingerale, add meatballs and cook until warm and liquid is reduced to a sauce

    stuffed mushrooms -- remove mushroom stalk, chop fine with other veggies (celery, onion, garlic) saute until cooked, (can also add meat bacon, crab, seasonings etc at this point) top with shredded cheese. Put in oven at 400 F for 15 minutes, until bubbly. As long as you have mushrooms it requires virtually no preplanning.

    I have the same recipe except it replaces the bleu cheese dressing and crumbles with 1 cup of ranch dressing. Definitely going to try it with bleu cheese next time and see if my wife notices any difference since she prefers ranch over bleu cheese for hot or spicy dishes.

    I got a couple that I'll have to write up, I'm awful about actually measuring/writing things down when I make new recipes. For now here's an old one, for crab cakes:

    beat the egg in a mixing bowl until nice and smooth, add mayo, beat until well blended, add mustard, beat some more, add worstersheezy and hot sauce, blend again, add spices, repeat.

    add onions and peppers, mix in, add crab, mix all that up, then add cracker crumbs. Form it all together like a meatloaf, if it's falling apart add more cracker crumbs until it's holding shape. I used little sauce cups to form mine into nice even patties, I'm sure a cookie cutter or some shit would work too.

    after patties are formed, roll them in flower, and gently shake off the excess. Toss them in the fridge for about an hour to chill them so they don't fall apart in the pan. Toss some Canola/Vegetable/Peanut/motor oil in the pan, whatever you got. Fry for about 5 minutes on each side over medium heat, til both sides are nice and browned. Eat that shit. BLADDOW
