well its easier the smaller number of people you have. probably cos of their company structure back then.
employees get together and work on a project, then the team is disassembled once the project is done.. so they probably didn't have a system of assigning backups and stuff. also it might have been affected by the merger with Enix.
It really doesn't matter at all tbh. If they wanna do a remake or remaster they will and can regardless of what these armchair developers say. Can't count how many times I've heard "FF7 lost all assets, they wont ever remake!!"
These were SE's official words, numerous times in the early-mid 2000s. Hence why they outsourced development of the X/X-2 HD remaster and had to redo KH from scratch. (You can pull plenty from a disk but not everything.) They also said VII remake would only happen if another FF surpasses the quality of it amongst other excuses, however it is indeed documented they no longer had/have the original assets of many of their PSX/PS2 game projects.
The only reason they lost the assets were basically not wanting to pony up the cash for storage. Back then sure, it's understandable to be cheap, but realistically, remasters/remakes weren't exactly a big thing and Square isn't exactly foreign to doing stupid shit like that either lol.
