Last couple posts have been very helpful.
So it seems like my plan should be:
"Train" with 10 curiel roots in a row to get the trait I want, then switch back to Karaka roots or w/e for cheap food to keep getting exp in the stables.
Then, if I want the 2nd tier trait, summon using gysahl greens and feed it a curiel root in the field.
That seem the way to go?

I feel like Healer is a better healer if you leave it at rank 6 though, once you have the barding stuff. Choco Surge just slows it down from spamming Cure, and Medica even moreso.
If only there was a way to un-learn Regen.
I'm not sure of the effects of D6 vs D10 on damage or not. D6 cuts out on it using choco guard, but you lose 5% STR and a 150 potency attack.
You definitely want A10, since despite the final attack being an aoe, it's the strongest attack a chocobo can get at 170 potency.
H10 is all kinds of bad, because medica is bad. It doesn't even need multiple people below 100% to trigger it; If your chocobo is at 100% and you're at 10%, it will medica. It seems like the AI for it is simply setup to alternate between the two of them, and atm is just not worth having. Putting it specifically into healer stance doesn't make it any more efficient like it does with other abilities.
The thing I'm worried about on A10 is the bird ending up tanking a bunch of adds and dying, particularly if you are using it with a job that has poor AoE damage.
I'd still do D10 because if I want my bird to heal or not heal, I'm toggling it between Heal and Attacker. Free just makes it use Regen more than I want it to either way, and seems to have way worse AI priorities about healing you.
I'd say they need to fix chocobo AI or let you customize its behavior in some way but, honestly, until we can use them for something the least bit meaningful it really doesn't matter.
All chocos are really good for it soloing stuff that you can't simply outlast as a DPS (tanks and healers can solo just fine).
Birds are amazing for DPS jobs that are doing FATEs. H4 is a complete game-changer.
I leave my bird on Free most of the time because I don't want to micromanage healing. It'll keep me right around 50% HP in Free, which is a good enough buffer for me.

What does this all mean?
Go outside, kill 1 mob that'll give EXP so it dings. Then you can use onion. I think?
Seems like it was something related to killing a mob. I went outside and did a FATE (to make sure it qualified as an "exp mob", even though the bird did not gain any exp), then successfully used the onion right after.
yes kill a mob > lvl up > remove the cap

Just as an FYI on barding: you get your second barding at Rank 16.
In my case, I originally hit Rank 10 as something like D4/H4/A7. I then fed my bird a Reagan Pepper to reset skills, and put everything in Defender tree (D10), at which point I got a paladin barding. Then I used another Reagan Pepper to reset back to D4/H4/A7. At Rank 15 I was sitting at D6/H6/A10, and upon dinging Rank 16 I immediately received a dragoon barding.
I'm both looking forward to and dreading seeing the new exp numbers required for 20+ in the expansion. It wouldn't surprise me at all if they nerf the 1-20 grind. Most people still barely have their birds to 10+. Now we're getting more ranks on top of it? On the bright side, new abilities will be cool to have. I'd love to see a choco esuna at some point.
