imo if you're new go safer and VIT for tanks
When you get used to it/better gear/good healers switch to STR
The basics. If you want to be absolutely safe:
Tank: VIT
WHM/SCH: MND
BLM/SUM: INT
BRD/NIN: DEX
DRG/MNK: STR
Others (crap or best players) might argue about the tank one but I really don't care. Some say STR as you don't need the VIT unless you're doing latest coil. Some healers will absolutely insist you take VIT because you shouldn't be DPSing, and blablabla something something clusterfuck
Your choice -- stat your tank up to your group's needs. It's really cheap to reset them nowadays.
Stat resets are 250 seals. I wouldn't worry about it too much for tanks. Go VIT or STR based on your needs and your party, then reset whenever. Easy.
If you're looking to level a tank or healing class, now is the very best time thanks to the rouge/ninja addition. From 15-31, as a healer you can post a Party Finder with three DPS slots for some pretty fast dungeon runs. Brayflox is where mobs start to hurt a lot so a tank would be needed from then on.

You can set PF to whatever party comp you want, and flagging with 4 in DF lets you enter with whatever arrangement you want.
FATEs, to my outdated knowledge, are solo to 10 > Aleport to 19/20 > Quarrymill to 29 > Costa to 36 > Coerthas to 41 > N. Thanalan to 50. Keep in mind I last did the fate train in October of 2013.
Depending on your server and if the ninja hype train is still going some of the fate areas can be pretty dead. I think right now it's a pretty safe bet that the ninja release/atma update has filled out the generic fate zones that Lyall posted.
I was leveling my PGL last night and found that the 0-10 zones were very quiet, with only minimal FATE activity. Looks like a lot of the NIN early-adopters are out in the higher level zones now.
The worse part is that think they are funny

I'm actually really surprised a lot of people stick to Coerthas and don't do North Than. much anymore. I suppose once people hit 44/45, they do the dungeon spamming.
Also, kind of easy to forget about but do your hunting logs! 0-10 grouping will easily get you like to 8 or 9. 10-20 roughly to like level 15. 20-30 a couple levels and so forth and so forth. Every little bit helps I suppose and you get a half-decent level 50 accessory when you finish it off that you can use until you get an i90/i100/i110 accessory to replace it with.
Hunting logs are a godsend, particularly 1-20
I think if you do purely hunting log with a couple fates or quests tossed in, you can easily go from 1->15 in a couple hours if not quicker lol
