I find lamb can be gamey depending on where you get it. I find the Australian lamb you find in grocery stores much more gamey than stuff I can find locally.
I make a za'atar rubbed leg of lamb that is delicious if you have a good leg. If they leg has a weird fat spiral through it or is too gamey I get tired of it quick.
Rack of lamb I find to be generally less gamey. I usually roasted the whole rack. Sear it in a cast iron pan, then throw the pan in the oven. Salt, pepper, butter or oil.
I'm ok with lamb, but dislike duck, but like caribou and antelope. Yeah, I got nothing.
There's a butcher near me that sells kangaroo meat.

I have had duck in the ballpark of ten times or so, and at least 6 or 7 of those have been bad. I can recall maybe twice it was good. It's a very difficult meat to cook correctly.
