1-2-3-4-5-6 is how Lucas wants you to watch them. But it kind of spoils the whole "Vader is Luke's father" twist.
4-5-6-1-2-3 is how most fans will tell you to watch it but since Lucas is an idiot, you see a random Hayden Chistensen at the end of Jedi of you're watching newer editions (which we will be).
I've also read about doing 4-5-1-2-3-6 which is interesting because you start off with the originals, find out about vader and Luke, leave off big cliffhangers with Han Solo, etc. Then you flip gears, get the backstory of Vader, followed by the conclusion of the series.
