At this rate, GRRM may kick the bucket shortly after Winds of Winter comes out, and D&D will be in charge or the project to write it, since supposedly, they are the only ones to know the major story plot points, as created by GRRM, and not translated to TV
It's still more likely than not that he survive to write the seventh (and hopefully final) book.
That said, all we know from interviews with him is that he alleges his notes will be burned on his death, and no one will finish his series. But that was many years ago, IIRC.
In any event, D&D would be no where near it lol. Most book readers loathe D&D for a reason. Elio and Linda would be more likely, but still... questionable. It'd probably be an unrelated author, if anyone.
It'll obviously be Sanderson. I don't loathe D&D, they did what they could do with what they had. They've made one of the most popular TV shows in history and did 8 seasons of great content. Did they cut a metric ton of shit and move the storylines around? Yep. Does it matter? Nope. I disagree with "most" book readers hating them. I'd say more like a few.

Sanderson has said that he wouldn't touch ASoIaF if asked. He's mormon and wouldn't include much of what Martin does, and fundamentally disagrees with the tone of the novels. He comments on it here:

I don't see anyone touching the series after Martin. If Martin were to pre-emptively ask anyone, it would most likely be Daniel Abraham, his co-author for many books, and whom he's told the ending so that he could better structure the comics. If Elio and Linda (ugh) were given leave to do anything, it would probably be some compilation of his notes and series direction, similar to Christopher Tolkien.
And with regard to D&D, I don't really want to get into that in-depth. Watching and reading interviews with them over the years has plummeted by opinion of them. They talk and write original content like stereotypical bros, including homophobia/misogyny/sexual violence that either wasn't in or exceeds the novels. And I think they lacked a fundamental understanding of various character arcs -- which should be obvious, when David Benioff says things like "narrative themes are for eighth grade book reports."
I just don't think GoT's later seasons hold up to other HBO flagship series in terms of in-universe logic, writing, or consistent characterization. It's an amazing series visually, audibly, and performatively, don't get me wrong, but definitely has narrative weakness. And you can say that's because they don't have original content to draw from anymore, but HBO's usually better at their original content than D&D have been.
