A couple pages late but geeky answer to your question is its because your camera phone set the ISO too high trying to take the picture in a lower light situation. ISO being the speed that film or your camera sensor accepts light. Lower the ISO= less grain "digital noise" high ISO faster exposure time but they turn out grainy as fuck. To shoot something like that indoors with no portable lights or flash you'd need a tripod.

On a side note if anyone is in or around southern AZ the Pima Air and Space Museum in Tucson has a SR-71 on display that doesn't have a guard rail up around it so you can walk up and touch, feel, molest the blackbird to your hearts content.
