The smoker ran out of pellets and I didn't feel like going to the store so I baked ribs. Quality was so poor compared to smoked.

I'll be eating a lot of scrambled eggs the next 3 weeks (8 eggs a day till my diet is over) and trying to find tips on how not to fuck them up.
I like my eggs slightly runny, so I've been doing my best not to overcook them, but getting them as cooked as I like them just leaves them warm. I can go straight from the pan to plate to finished eating in 3 minutes or less and there's not a single bite of hot eggs.
tf do I do w/o cooking them further?

I use a grill when possible, cast iron when not possible. I like to take a heatproof glove (https://www.amazon.com/Grill-Heat-Ai.../dp/B00CHO64NE) and press cuts down by hand. You're only getting 30-45 seconds of heat usually so you want to ensure you get full coverage.
Oh yeah I forgot to mention grill cause it's been cold and I'm thinking indoors.
Cast iron and oven smoke up the house, I put the cast iron on the grill and try to get to 500 if I can.
I did a city ham sous vide for Thanksgiving and finished it on the grill with a home made glaze, fucking epic.
What to do with leftovers today? Waffles!
Leftover stuffing, add a little chicken stock and an egg to moisten, use as 'batter' in waffle machine. Cook until properly crisped, then top with your choice of leftovers. I went with turkey and cranberry sauce on the left, rutabagas and gravy on the right.
I should have taken the time to clean up the edges, but it looked too good to waste time so I ated it ugly.
