I normally throw the prosciutto on the pizza for the last 3 mins or so to firm it up, but this was supposed to be a "salad" style pizza. Wanted to leave it as is.
Probably make another one tonight because I still have ingredients. Likely sopresatta and artichoke.
I think our next pizza plan is to recreate this Detroit Style pizza we had in Telluride a couple of weeks ago. It was great! Just normal like pepperoni, sausage, ricotta, but the whole combo of thick crust and crispy cheese made it amazing.
Not with that one. The lemon in the dressing would be the citrus, though I guess you could add something sweet too. I think it'd be too much.
I add honey to another pizza I do about 2-3 minutes before I pull it out. Sharp cheddar (the sharper the better), mozzarella, parmiggiano reggiano. No sauce or herbs on the crust for this one. just want the sharp cheese to come through. Brown it in the oven, pull it out when mostly browned to top with honey. Throw it back in the oven, but don't let the honey burn.
Decided to make low carb chicken enchiladas for dinner /meal prep.

I put 3 boneless skinless chicken breasts in the pressure cooker for an hour ( most likely 35-45 minutes would be ok) with a can of rotel tomatoes, few tbsp. green salsa, 3 tsp minced garlic , chili powder , cumin ,sea salt , pepper , smoked paprika , onion powder, oregano and a few dashes of cayenne pepper.
I used LaTortilla Factory low carb whole wheat tortillas ( small ones not burrito size).
Topped with Sargento Mexican blend cheese and baked for 15-20 minutes at 375 degrees.
I also made different fillings - some have the enchilada sauce inside, some have green salsa, other have just chicken and cheese.
Just a little sour cream on too and these are awesome.

I always see "bone broth" these days but wtf is the other option? What were people making broth from other than bones?
I've done low carb and keto cuts, food is better with carbs. No refried beans, not as deep and well developed of flavors with the sauce, just fats upon fats and shitty tortillas.
Carbs are life.
Since keto is the in thing, our local grocery chains have jacked the prices and made the bags smaller for pork rinds. Two years ago a big ass bag was like, $1.50. Now a baby bag is $2.50. Also, fuck the carbonated water fad. Shit is disgusting.
Bone broth is basically just stock and is primarily made from bones and joints. regular broth will leave the meat on the bones when used or might use just the meat.
They help some things and fuck breads and potato's are basically my favorite foods but it aint no universal better maker.... that's fats. And refried beans don't do shit to improve enchiladas
Made some yummy hatch chile queso dip the other night with some nachos , but today decided to try something new.
I took a tomato basil sandwich wrap and cut it into triangles, brushed with avocado oil and tops with salt then baked in the oven at 350 degrees. Yummy homemade chips that go super good with the queso dip.

Tried out my first keto bread recipe , lemon poundcake. Since the Starbucks lemon loaf was my all time favorite treat , this comes damn close. May try tweaking it a bit but it came out great.

Wife, in her limited non-breakfast cooking ability, was inspired to try something bold.
Ended up with bacon wrapped and blue cheese crusted filet with a red wine shallot demi and sauteed asparagus. I cooked the steaks to temp, but she did everything else. I was really impressed.
Made some cheesy chicken stuffed poblano peppers. I charred them under the broiler but probably even better with a gas stove/grill.
Usually I take Costco rotisserie chicken or make my own in the crockpot , but I had some canned white meat chicken from Costco to use and it worked out great.
