Simple quesadilla done right.
I use leftover chicken (in this case, slow-cooked boneless chicken thighs I got for like 1.70 a lb and cooked with a little soy vay and secret ingredient) any kind of cheese that melts (extra sharp white cheddar for this, not the best melty cheese but not bad at all!) and fresh veggies (red pepper, raw sweet onions).
Put a small pat of butter in a non-stick pan and coat.
Put down flour tortilla with thin sliced cheese (I actually don't grate it, the slices melt better for me) on it.
Let it get a little crispy. I don't add any veggies before I fold it because I like em crunchy, they'll steam if you leave em in the whole time. You can preheat the chicken or protein if you want but I find adding it with the veggies is usually more than enough
ADD EVERYTHING TO ONE SIDE ONLY EXCEPT THE CHEESE.
This is the rookie mistake EVERYONE makes. It's also why I don't do the "full" quesadilla. Unless you are a ninja chef, you are gonna drop fucking everything on the stove.
Fold cheese only side over. Cover pan for 2 minutes.
Flip and recover for 2 minutes.
Put on plate, take a picture for BG
Slice into 3 or 4 pieces and eat with guacamole, sour cream, hot sauce, caviar, foie gras or whatever.
