    Simple quesadilla done right.

    I use leftover chicken (in this case, slow-cooked boneless chicken thighs I got for like 1.70 a lb and cooked with a little soy vay and secret ingredient) any kind of cheese that melts (extra sharp white cheddar for this, not the best melty cheese but not bad at all!) and fresh veggies (red pepper, raw sweet onions).

    Put a small pat of butter in a non-stick pan and coat.

    Put down flour tortilla with thin sliced cheese (I actually don't grate it, the slices melt better for me) on it.

    Let it get a little crispy. I don't add any veggies before I fold it because I like em crunchy, they'll steam if you leave em in the whole time. You can preheat the chicken or protein if you want but I find adding it with the veggies is usually more than enough

    ADD EVERYTHING TO ONE SIDE ONLY EXCEPT THE CHEESE.

    This is the rookie mistake EVERYONE makes. It's also why I don't do the "full" quesadilla. Unless you are a ninja chef, you are gonna drop fucking everything on the stove.

    Fold cheese only side over. Cover pan for 2 minutes.

    Flip and recover for 2 minutes.

    Put on plate, take a picture for BG

    Slice into 3 or 4 pieces and eat with guacamole, sour cream, hot sauce, caviar, foie gras or whatever.

    I do them the same (leftover roast chicken, grilled peppers and onion, cheddar and/or jack), but I do the full size FLIP OR DIE method. If you're going for a full one, I usually layer the bottom with cheese, add veggie & chicken, more cheese, then top tortilla. I also use olive oil spray instead of butter cause the fiancee says I'm going to make her fat. EDIT: I've been using the smaller, corn tortillas recently as well. Helps with the 'DIE' part of FLIP OR DIE and better for portioning if you're watching what you eat.

    Also, let that cheese ooze out a little to get some crispy cheese lace on the sides. MMMMMM.

    Used this recipe the other day to make Mongolian Beef. Was really good, but I added a bit more Sriracha once I got it in my bowl. After adding the beef for a minute I added diced zucchini. Let that cook until meat was almost done, then added the sauce and topped with baby spinach. Let it sit a minute or two while sauce thickened and spinach wilted. Stirred it all up and sprinkled on some sesame seeds.

    Going to make it again this week for sure.

    Sharing my two new favorites here :

    Skinny Cheesecake cupcakes ( no crust/low carb)

    8 oz. 1/3 fat cream cheese
    6 oz. Nonfat Greek yogurt
    2 egg whites
    1 TBSP. flour
    1 tsp. vanilla extract
    6 packets Truvia ( or 1/4 cup sugar)
    Strawberries for garnish

    Heat oven to 350 degrees.
    Using an electric mixer mix softened cream cheese , vanilla and truvia/sugar until smooth. Gradually add in egg whites and flour until blended smooth.

    Using a muffin tin line with cupcake papers and fill each cup halfway.
    Bake in oven for 20-25 minutes until centers are almost firm.
    Cool at room temperature for 25-30 minutes.
    Refrigerate for at least an hour then garnish with a strawberry slice.
    Makes 12 cupcakes.

    Mae my first quesadilla at home thanks to the above inspiration. Pretty much any technique above works too but this is just how I did it.

    2 oz. diced zucchini
    1oz. sliced red bell pepper
    1oz. diced red onion
    1/4 cup Sargento Reduced Fat Mexican Cheese Blend
    2 oz. Organic Grilled chicken breast ( seasoned with sea salt and pepper only to taste and sliced for multiple meals)
    Whole Wheat Tortilla Soft Taco Size

    Grill chicken breast and slice thin and set aside.

    Saute zucchini ,red bell pepper,and red onions in a non stick pan on medium heat ( I use Organic Pam with olive oil) until just tender
    Set aside.

    In another pan place whole wheat tortilla down and place the cheese on one half of the tortilla and cover until it just starts to melt.
    Uncover pan and place veggies on the non cheese side. Place chicken on the cheese side and flip tortilla over.
    Cover and cook one minute and slice into thirds.

    My local grocery store has the corn tortilla bags with like 100 tortillas in each.. Actually it may be more like 30, but still. I never run out of tortillas.

    Was trying to figure out what the fuck to make for breakfast that wasn't the same shit so decided to take the last eggs in my fridge and load veggies and made Muffin Frittatas. You could put anything in it.

    Muffin Frittatas
    Makes 8

    6 large eggs ( you could use egg whites if you prefer)
    1/8 cup whole milk
    1 oz. diced zuchinni
    1 oz. diced red pepper
    1 oz. diced red bell pepper
    1/4 cup Sargento Reduced Fat 4 cheese Mexican Blend
    Salt and pepper to taste

    Preheat oven to 350 degrees.

    In a skillet saute veggies with salt and pepper to taste in pan for about 5 minutes on medium-medium high heat until just tender.
    Set aside.

    Combine eggs, milk , salt and pepper to taste and whisk together until well combined.
    Add in cooked veggies and stir to combine.
    Spray muffin pan with non stick spray
    Pour into muffin pan filling each about half way. ( I did not use muffin papers but they would work best probably)
    Take cheese ad sprinkle a little onto each.

    Bake at 350 degrees for 20 minutes or until golden on top.
    It is not uncommon for them to fluff up and then deflate upon sitting/cooling slightly.

    Nutrional info per muffin :

    69 calories 1g carb 5g fat 6g protein

    I smoked a 2 pound pork tenderloin today at work (I work at a barbeque store) for 7 hours. 2 hours over direct flame at 250 and the 5 hours over indirect heat in tinfoil at 225.

    Best piece of meat I've made here yet. I injected it with some creole garlic marinade and rubbed it with some honey lemon pepper. When it went into the tinfoil, I added a little bit of mango orange peach juice.

    It has been sitting in a zip lock bag for the last 2 hours with the liquid from the tinfoil to let it reabsorb some of the juice. Can't wait to get home in the next 30 min to try it.

    Lamb Tacos

    Ingredients:
    Lamb Shoulder Steaks
    Soy Vay (or honey/soy sauce/sesame seed sauce)
    Sriracha
    Black Pepper
    White/spanish/sweet onions (again take your pick here) sliced very thinly
    Baby Spinach - washed
    Flour tortillas

    Lamb Shoulder Steaks - Seared off in hot hot hot pan
    Put in slow cooker (or braise it, some shit) with Soy Vay (or soy sauce/honey/sesame seeds) and sriracha
    Cook until a lot of the fat renders out.

    Toast tortillas over straight fire until kinda blackened a little bit

    Slice onions REALLLLLY thin put in a bowl with some red wine vinegar and pepper and toss.

    Put stuff in taco and eat it.

    Remember to fucking toast the tortillas. That toasted flavor is godly.

    not quite on the same tier as the usual posts here, but something i read about in Men's Health, of all magazines, that actually works:

    add dijon mustard (not much) to mac n cheese when you add the cheese sauce. gives it a bit of a tang. for one box of mac i do about a teaspoon of dijon, works well. if you do much more than that, though, the dijon taste overpowers everything else. also, i highly recommend this Annie's brand mac. Sits better and tastes better. also, almond milk works just as well as dairy milk. useful if lactose bothers you.

    I also highly recommend Annie's brand Mac and cheese also. About six months ago Kraft which I've eaten boxes of my entire life made me feel so heavy and sick. Tried several organic options and found Annie's and Horizon are the best.
    I rarely eat prepared pastas now but that's all I eat when I do.

    For those box mac-and-cheese stuff, Anne's is good, yeah, but also try Greek yogurt instead of milk. Someone else suggested almond milk, and while I've never tried that, greek yogurt is simply wonderful

    For all mac and cheese lovers, this may be old news but you should bake the whole thing with breadcrumbs and shredded cheese on top. You can also just broil it if you have the consistency you want already.
