    I've been baking a lot more recently (I hate store-bought cakes, so I designated myself office cake-maker for birthdays). There's also some pies from pie day (I may have posted them already, oops) and our after-ranktest dinner desserts. Working on some irish beef stew for dinner.

    Key lime and applie 'pi' pies for Pi Day.



    Desserts for the 50ish people at dinner include key lime pie bars, apple cheesecake bars, s'mores brownies bars, and carbomb cupcakes. Also there's vanilla, strawberry, irish cookies and cream, and chocolate chip cookie dough ice cream.


    Strawberry-filled chocolate cake, strawberry cheesecake, german chocolate, and coconut cream cake for office birthdays (by request).

    Cook bacon
    Pour off 90% of the fat
    Put in 1 small/medium onion quartered then chopped
    Brown/fry until translucent
    Add two well-whisked eggs
    flip in half
    Cover
    wait 2 minutes
    flip into 1/4
    put on a slice of cheese
    Start toasting bread
    cover eggs again
    Put toast down, add ketchup or hot sauce
    bacon one side
    eggs other side.

    Oh it's just a fancied-up bacon, egg, and cheese sammich. Looks damn good though!

    Someone came up w/ a recipe for "Gotcha Roast Pork" from Shingeki no Souma

    Mashed potatoes mixed with saute onions and mushrooms. Rolled into balls, rapped in bacon and put in the oven. Red wine with a hint of soy sauce for the sauce.

    Parents had dinner at Arzak last night. They've eaten literally everywhere and said it was Top 2 meals of their lives. I'll post a pic of their menu when I can get a picture of it.

    I've been pretty obsessed with steel cut oats and "overnight oats" in general.

    I've been using this site and recipe for a base idea and going from there :

    I created my own Nutella Overnight oats and they are amazing. I don't eat it often but had some in a leftover jar and this was the perfect combination.
    I topped it with some organic raw almonds and cinnamon.

    Nutella Overnight Oats

    1 cup plain lowfat or nonfat Greek yogurt ( I prefer Wallaby Organic)
    1/2 cup unsweetened vanilla almond milk
    1/2 cup steel cut oats ( I use Bob's Red Mill Organic Quick cooking steel cut oats - They carry a large bag at Costco for cheap)
    2 TBSP. Nutella

    Blend everything in a large bowl and portion equally into 3 jars or small ziploc containers.
    Refrigerate at least 4 to 6 hours or overnight before enjoying.

    I have yet to find oats that I'd be willing to cook. I wish I loved nutella because those look good.

    My recent stuff:
    Tons of stir fry (Sliced pork chop, chicken thighs, tried tofu too)
    Turns out you need a FUCKING hot pan to do tofu properly.
    Been going back to a lot of braising.

    I think we have other cooks on BG that surpass me by a lot. I only know how to make a few things well. Most of it is dumb luck.

    Try dredging in corn starch and frying the tofu before you toss it in your stir fry. It will give it a nice crispy texture. You shouldn't need that hot of a pan for it either.

    I'm trying to avoid starches. I end up using a little bit but I like to avoid dredging. I always cook the tofu ahead of time and then plop it in.

    Speaking of, I had some in-house made cold tofu at a Korean joint last night that was fantastic. It looked like vanilla ice cream and had the smoothest consistency.
