So thanks to all those burger posts a couple weeks ago been experimenting making some of those juicy Lucy's with sous vide. Turns out works pretty good. One thing I've noticed using the sous vide is you don't need a more fatty beef like you normally do for burgers.
8 4 oz patties seasoned with garlic salt and thyme half of them with 2.5 slices of sargento sharp cheddar
Patties put together and put into sandwich bags. More salt and some pepper added
Straight out of sous vide letting them rest a bit before searing
Couple minutes sear in cast iron with some butter and put on onion buns and some sautéed mushrooms.

Do the burger loosen up in the sous vide at all? Do you anchor them on something so they don't end up sideways?
What you mean by loosen up? As far as anchoring... knew I forgot a photo lol. Basically yeah I thought about it but didn't have anything real good so just clipped to side but as you can see from photo the little shits kept wanting to float to the top flatwise.
Don't have a pic of it but ended up putting clips on the bottom of the sidebags and then those kept the others down. I was a little worried about them cooking sideways but didn't see much if any deformation so ended up being fine. Think it might because I used leaner ground beef, (88/12 but also used 90/10 one day and still worked just as good).

I get home from Europe Thursday. I'm opening my anova when I get home, and cooking with it on Friday, Saturday, and Sunday... Maybe Monday too.
I need a Ribeye recipe, I will finish on cast iron since I usually do sear/oven/sear method. Might as well invite parents over and blow their minds with a cheaper cut too like strip.
Also need a legit fucking pork chop recipe. I have hated pork chops all my life BUT I DEMAND THIS CONTRAPTION TO CHANGE THAT!
Idk what else I'll cook. Probably meal prep chicken, saw zet mention thighs.
I like simple recipes since I'm just getting back I won't have much time to go crazy with prep.
Don't bother with a presear.
Pork recipe is very very simple.
Get a pork chop, brine with salt water, peppercorns, and BROWN SUGAH.
Parts are:
3 cups water
3/4 cup salt
1/4 cup brown sugar
Brine for awhile (Overnight)
Sous vide at 145-147 for an hour and a bit. (I cook from frozen mostly so I add 15 minutes if thawed, 1 hour or 1hr10 is totally fine.
Here you can add stuff, I never do.
SEAR THE MOTHERFUCKER ON A HOT ASS CAST IRON I MEAN LIKE SO HOT ITS THE FUCKING SUN.
30 seconds each side x2
Serve immediately (No need to rest)
I usually pair with roasted onions/carrots along with baked sweet potato or something similar.
Note: The sugar will cause the chop to caramelize like a fucking boss. If you want EXTRA SEAR BONUS POINTS then add butter and more brown sugar before you sear. I do not recommend this.
Chicken is super easy. Basically make a brine in the bag (Almost no water though, you want the chicken juices to be the base)
Salt
Pepper
Garlic Powder
Put that shit in a bag, I don't even measure, I just go for it.
Sous vide for an hour or so at like 150.
Process for later consumption.

Yeah ditto chicken being super easy (though really this thing making pretty much everything fairly easy). Can basically put any spices you like on chicken in there and as long as you get the temp/time right for how you want it done it comes out great. I've even done just a little salt and ate it right out the bag cause I was too tired and hungry to do real cooking and was still good. Though obviously you gunna want to do something with it. Sear it if nothing else
What's best suggestion to finish chicken cause it comes out gross right? Say I'm doing a batch of idk 3-5lbs. Broil?

So while rest of the meal finishes cooking here's my salad and bread start. Salad is fresh cucumber and tomatoes straight out of coworkers gardens and red onion I had to buy marinated in avocado oil, balsamic vinegar, salt and pepper for a couple hours. Bread was some new thing I saw at Safeway that turned out pretty delicious. Was Filone with asiago cheese. Some of it was dipped in the salad sauce which was a mistake as it overpowered the bread flavor and the others were covered in unsalted sweet butter from a local company which is amazing.

Seared on cast iron in the butter they cooked in alongside my attempt to make salt potatoes
Then final plating. Meat sliced, potatoes mashed with some butter and sautéed garlic on them. Some mushrooms, red onion and garlic sautéed with avocado oil and lots of butter and then more of the bread from earlier.
