Man I love my anova.

I just did 6 cutlets and 4 pork chops at once, then turned the water up and did asparagus.

Dinner was chops and roasted broccoli and I've got half the chicken seared for lunches with asparagus and the rest of chicken in an ice bath right now to finish later in the week.

Yeah. You can just pop it in the fridge. There's no cooking to stop.

Its not to stop cooking, an ice bath is to rapid cool it to a bacteria free temperature faster than just putting it into a refrigerator.

It doesn't enough difference either way.

As soon as a food hits a certain temperature it starts to "rot," for lack of a better term at the moment. Ice bath will cool it faster so it spends less time in this phase, but there really isn't much point. The food will still keep for several days, ice bath or no.

While most of the time the fridge is fine because it'll still cool it down quick enough, the ice bath is much faster, safer, and better for larger foods and quantities of food and will keep you from affecting the other food in the fridge.

So did an experiment. When I did the tritips last weekend I ate 2 and post those then cooled froze the other 3. Vaccumed sealed for sous vide this time so could just straight freeze them hoping it work out well. Thawed out cooked one the other night to see how it worked out. Definitely not as good. Bunch of the blood and juices came out while thawing... but I cooked them up with it when I seared and dripped it over it. Definitely not as good color as last time but not bad for a lazy dinner especially considering all I basically had to do was thaw then spend all of like 2 minutes searing
