When dealing with people with vary levels of spicy tolerance I like to keep the base ingredients the same but allow them to adjust with addons. So Mexican stuff usually sour cream or guac (unless you got a spicy gauc too lol). Other ingredients also help take some of the overall heat down.

You could make it, and put serranos in it. That's what I do.
I've been making pork adobo using a generic filipino recipe. It's so easy to make and tastes absolutely incredible whether made on the stove top or thrown in the crock pot for 8-10 hours.

We use more soy, less vinegar, no water, more garlic, and will throw in red pepper flakes.

Should make a few notes:
I didn't use tenderloin I used bone-in loin chops.
I used about 2.5 lbs of meat so I doubled the marinade recipe.
It was pretty fiery initially but the more it marinated, the more mellow it got.
For completions sake: I didn't use oregano. Didn't jibe.
