I mean it can be , as it gained popularity with keto , but I thicken the gravy to be amazing with it. I tend to use chuck roast which does have some extra fat but it makes the gravy so much more flavorful too.
When roast is on sale I've been known to make it twice a week ,just so easy in the crockpot.

My mother does the same thing, think she uses au jus gravy packets. It really does make it a ton better.
Yeah, astylla's recipe involves au jus packets and seasoning the roast with ranch dressing powder, and pepperchini for flavor. Comes out really good.

Decided to do a short smoke today and smoke up some pork loins and the wife made us some potatoes and asparagus.

Tuna, mashed potatoes, cilantro, lime.
Simple and amazing.
Edit: garlic mashed potatoes, tuna was sesame seared, sauce is honey ginger.

Made my first sous vide roast and it came out delicious.
Basically I remembered that Melena loved his dad's cooking of this and wanted to recreate it the best I could given everything he is going through.
It was a bottom round roast and used my vacuum sealer the first time too and addicted to that thing now lol.
Basically seasoned the outside with just sea salt then seared in avocado oil at high heat for a pre cook sear. Vacuum sealed bag and cooked for 11 hours at about 133 degrees.
Out of the bag it was very tender and closer to slightly medium but absolutely flavorful.
The juices left behind I poured into a saucepan and added some trimmed fat off the roast along with a few ladels of beef bone broth and fat/roast from a previous meal I had been breaking down the last two days with thyme, sea salt and worstechire sauce that had thickened and became flavorful. I haven't made a gravy in forever so was so happy it came out well.
Definitely making this a regular meal from now on.
