They canned him because Marvel wants to create the spiderman they want.
Myrrh is more or less correct. Garfield spoke out about Fox and how bad he thought they made spiderman 2 so Fox got rid of him. That was all before the spiderman/marvel thing was even announced.
Not that Fox said that was the reason they got rid of him. They haven't given an official reason I believe.

Kraven would be cool, bit it's been a long time since I've read a spiderman comic so I dunno how relevant he is these days. I'd go with my favorite spidy villain: Mysterio

Kraven seems too dark of a story for such a young kid to do. Maybe a sequel villain.
