As someone who has never seen nor read any Fate/Stay [subtitle], the thing that initially attracts me to a lot of the stuff I do end up watching is animation quality, which the above clip definitely had (hellooooooooooo Sword of the Stranger, and Birdy the Mighty: Decode). Are there any entries in this franchise of similar quality, and if not, is the plot good enough on its own to merit watching? Will everything fly over my head if I haven't touched any of the other material?

What you saw was a new adaptation of Fate/stay night being done by ufotable and airing this Fall. There's an older version done by Deen, but it's not worth watching (poor production quality and a bad merge of story routes).
ufotable got the job because they knocked Fate/Zero out of the fucking park. Fate/Zero is a prequel to Fate/stay night. If you should watch it first is a sticking point, because it's going to spoil reveals in the story of Fate/stay night. As such DO NOT TOUCH THOSE SPOILER TAGS IN MY LAST POST.

As far as anime, the only other core material is a movie by Deen that focuses solely on one of the game's routes. I haven't seen it, but I think the quality was better than the show.
There's also an alternate property in Fate/kaleid liner Prisma Illya, which is basically Tenchi Muyo's Pretty Sammy meets a bit of Nanoha. The only other thing is Carnival Phantasm, but it's a comedy thing pulling on material across Type-Moon properties.

There are a set of alternate continuity video games, two fighters and a dungeon crawler. But the main game is the original visual novel. I say everyone should play it, but some people don't like VNs (also, it has a few porn bits, it's difficult to sell VNs without them, no matter how good.) There is also a semi-canon follow up VN, Fate/hollow ataraxia, but last I checked the translation and patch was nowhere near 100% finished.

tl;dr You can wait for Fate/stay night this Fall, then watch Fate/Zero. Or you can watch Fate/Zero now, but ehh maybe you shouldn't.
Or you can play through the original Fate/stay night game now, then watch Fate/Zero, then watch the new Fate/stay night.

I think watching Fate Zero after is the better choice, but it's a long wait and Fate Zero is fucking awesome.

Ideally, read the VN then watch Zero. It's really damn long (50ish hours, depending how fast you read) but worth it. Starts off a bit slow, then it grabs you and doesn't let go. I ended up reading Heaven's Feel in one day, then passing out.

I'd also recommend watching Kara no Kyoukai, as it takes place in sorta the same universe and delves into some of the same concepts. Tsukihime (the VN) also.

Watching F/Z after the reboot is a pretty bad idea, since Ufotable directly said that they were making it tie in with references.

Kara no Kyoukai is a different universe. Tsukihime and F/SN are in the same universe. F/Z has a reference to KnK, but nothing more. It has no bearing on anything.

And yes, Fate/Zero, while resulting in the events of all three routes, uses information learned by the reader after completing Heaven's Feel as the core of its plot.

Kinoko Nasu did not write Fate/Zero, it was penned by Gen Urobuchi as a homage to the series and authorized as canon by Nasu after publication.

    Spoiler: show
You know next to nothing of Sakura's situation in the VN at all until HF. You know that the grail is corrupted in all three routes, but only in HF does the issue directly involve Angra Mainyu rather than just a big abomination of black goo. You get a little insight in Fate by Kirei, but it's not much. Kirei only goes off on his monologue about Mainyu during his final confrontation with Shirou in HF. This is the stuff that Urobuchi went off of to write the core plot of F/Z.

You also don't really learn much about Kiritsugu's involvement until Kirei mentions it in HF. You actually don't get much anything even there; Urobuchi took liberties with that and made up his abilities for the story. They are canon now.

V/N really is the way to go. I'd start now though, it's a LOT of text and you don't want to get burned out by the time you get to Heaven's Feel.

Cannot be said enough. And if you never tried VNs, Fate/Stay Night is the best place to start imo.

Just be aware of which VN version you get as the original had porn but subsequent releases are all ages friendly. Might not matter to people, either way, but mentioning it just in case.

I really don't want a lot from this except the hopeful addition of Bazett and a really cool looking first use of Archer's reality marble.

Not too much to ask I think.

    Spoiler: show
I would absolutely love it if whatever route they do (or patch together) they just have Bazett wake up at the end implying Ataraxia has actually begun and everything is a loop now.

Even if you use the original version, there's a patch to include the voices from the Realta Nua (AA) release. It adds a lot, and the voice actors will be the same as in the upcoming series.

You want the original PC version + English patch + Realta Nua patch. That gives you voices for most of the scenes + H-scenes (without voices) + epilogue after you finish all 45 or so endings. Easy enough to find on ny****rrents.

So they decided to adapt UBW Route when it airs in October(split-cours. second half in April). which is weird when it was suppose to be an original route.
