i wonder if rights to use characters are open for more than 1 per franchise. they've done an amazing job with 3d capcom and snk so far, would love to see what else they could come up with if the cost isn't too high.

It doesn't really matter, just use whatever you're comfortable with.

There's really only a handful of techniques with "extreme" input requirements (Korean Backdash, EWGF, and Jack's blue uppercut). Outside of the Backdash, which you can "fake" by doing the sidestep variant, there isn't necessarily hard inputs if you're not playing a Mishima or Jack.
