What's the deal with custom deliveries? Just a few gil, EXP and scrips for turn-ins kind of similar to beast tribes?
They are mostly just a really easy source of red/yellow scrips every week at max crafting/gathering level. I've never used them for exp so I have no idea how good they are for that.
Are there any other rewards like minions and etc?
Just titles from the achievements related to each of the NPCs.
Yes. Its the easiest and fastest way to get Red/Yellow Script as well. At maxed out reputation you get a lot more script than normally.
I recommend doing them though. More so for the yellow script (Free money) but free exp isn't bad.
How exactly does one acquire money with yellow scrips? Asking for a friend >_>
They are great for exp actually. You can use any high level job to craft items for hand ins to level lower jobs

Legit I have no idea what job to play since I only have a week to find out if I'm resubbing lmao. I'll prob do BRD and WAR. What level is POTD go to level in until?
Oh yeah I should have a Fantasia scroll or something right? I never used one and thought they were a preorder or vet bonus a while back.
When I server transfer do I get a name or race change with it?
POTD you can get great exp in until level 60, after that you just need too much exp for it to be good anymore. At level 61, and once you've got far enough in the MSQ, you can unlock heaven on high, which is just a level 61-70 POTD basically for leveling.
And for the best exp in POTD, I think the go to floors are 51-60 since it is generally really easy and once you clear floor 50, you can just start at floor 51 over and over again.
Random PoTD note (from my own personal experience)
If you go into PoTD at a VERY low level (pre-30, before you unlock the associated job), depending on the class, it can really suck, because you'll be missing any skills that are strictly job-only. For example, my wife was leveling THM (precursor to BLM), and we quickly found out that she never got Blizzard 3, which is rather critical to how the job works.

Will NIN still be highly valuable (maybe not meta necessarily but at least up there with drg/brd) if trick attack buffs monster damage too like I saw rumors of?

they specifically said they were trying to lessen the player perceived need to have certain jobs by reducing synergy. although I took that more to mean job pairs rather than individual bonuses. ie having a BRD or MCH meant needing a DRG rather than trick attack type things
so long as its most efficient to setup burst windows, NIN should always be desirable
