So good job pairings I’ve found:

Cleric/Dancer - Basically an unlimited map healer that can buff and cover 2 magic weaknesses
Scholar/Merchant - Cuts SP costs in half, making management much easier without plums (bonus for Rest and Money+)
Cleric/Scholar - Lots of MP, healing, 4 elements, and potent nuking potential
Warrior/Hunter - Covers almost all physical weapons, strong physical Skills

Still playing around with how to optimize Thief and Apoc

Theorin with Dancer for the speed/evasion.
Olberic with Hunter for more weapons
Ophelia with Apochocary for status removal
Cyris with Merchant for wind

They're in the next areas. You should find them on your way to the next city your character goes to for their 2nd chapter.

It<s so popular that at some place they seem backordered for 1-2 months

Another question about those Cait Monsters.

Can you find them anywhere? or are they in specific zones only?

Having Ophilia lv 4 after her chapter 1 was fine, but it's gonna take her a while to grind up to lv 20 ish for her chapter 2

I think after going through everyone's Chapter 1 I only had to grind for an hour outside Victor's Hollow

They're those mobs that run from battle right? I found them in the tomb of kings or whatever that dungeon is called in the Highlands

There's literally never any reason to grind. Equipment eclipses levels statistically, so just throw some decent stolen/bought equipment on her, and she'll hold her own—increased HP is the main benefit of leveling.

For instance, I just did Cyrus' Chapter 2 with him beginning at level 6, with equipment to match my ~27 team, and he did almost as much damage, and was almost level 20 by the end.

As for Caits, they're rare spawns in any area in the game. Best way to defeat them is using Soulstones, then Leghold Trap from a Hunter, then giving the Hunter BP to max boost Capture. Still get the rewards, plus the best buffing/debuffing tamed monster in the game.

I like pairing merchant and thief on the same character because Snatch applies to both Collect and Steal. Might also work with the merchant divine skill, but I haven't gotten enough JP yet to test that.

I've been using Dancer's Second Wind on all of my mages to deal with SP. It recovers based on max SP, so with Ophilia/Scholar and Cyrus weaing +SP gear, they both get 14~15 SP every turn, which is enough to make them basically never run out even if casting T2 spells/Heal More every turn.

Ending does seem to hint at there being more to the game if you finish it with more characters. The Dragonstones Therion was after apparently are rumored to open something called The Gates of Finis(sp) which could change the very world. Wonder if other people's stories will connect to that or mention something similar which will link everyone together for the final dungeon/boss.
