It's a cultural taboo for a lot of human cultures because the horse is a working animal and often we form bonds to such working animals (like dogs). They aren't nearly as intelligent as dolphins though.

I wouldn't eat swan, at least in the UK. They dwell in man-made canals more that they do streams and rivers. Probably high in lead and canal detritus. Eat Goose, it will be just about the same.

I don't even like eating fish because I think of how they were just minding their business in a river one day and suddenly they get hauled out to be eaten. I could never eat something that wasn't raised for the express purpose of me eating it.

That said one of the best meals I've has recently was the wild-caught Alaskan salmon at Joe's seafood in DC but that it's still not often I eat fish.
