Oh wait potato salad, not mashed potatoes. Remove the butter and milk. Get good mayonnaise. A dash of mustard is welcome. Look up a basic recipe for the rest of the shit.

Mashed potatoes I'm confident with. Potato salad I've never done and I've only ever heard stories about how for white people potato salad is to cooking as natural rhythm is to dancing.

Southern potato salad is heavier on mustard, relish, paprika, pepper. It actually has flavor. Miss me with that northern mayo and raisins shit.

Notes on what I do:

Don’t worry about her crazy method for boiling.
Boil the potatoes as you normally would until soft (not mushy).
Turn off the stove, drain the water, keep the potatoes in the pot you cooked them in and place it back on the same burner you used (but keep it off).
Let it sit there until the steam is all gone (about 5-10 minutes). And you’ll achieve the same consistency for less work.

I have used both the rice syrup and sugar, sugar is better.

I add shredded carrots with the cucumbers. Make sure to drain the cucumbers as she explains.

You can just chop up all the eggs. The one yolk thing she does is just a garnish and doesn’t really stand out unless you put it on top of individual servings. Not worth it, imo. Just throw that yolk in with the rest.

Make it the day before and refrigerate it so it’s nice and cool when serving.

[edit]If you end up making this (and you should) save the recipe somewhere. I’ve used maangchi for years for anything Korean, and she is the best. But I noticed the last time I made bulgolgi, she changed the recipe, and there was no reference to her old version. Thankfully, I had that saved already, but now I am saving everything I love of hers to my drive.
