Boondock Saints - opening sequence is awesome, and a few others are great.
Braveheart - been said, also the sequence with him running around the mountains.
Lord of the Rings - seriously, so many awesomely shot sequences in these movies, running from the balrog in Moria, many of the scenes involving Saruman's tower and the formation of his army, the assault by the riders of Rohan, the ending sequence, the lighting of the torches over the mountains... way too many to list, esp w/ the extended editions (one of the few movies where an extended edition is actually worthwhile).
I suppose most of my favorite scenes from movies involve great synergies of cinematography and music, if a director can get the mix right, then dialogue doesn't even matter. Although if great dialogue well delivered can be thrown in as well, thats just something special.
The moment Marla Singer and Jack stood watching the buildings explode and collapse as he says, "Marla, you met me at a very strange time in my life..."
Man on Fire: The scene where he has Fuentes, turns to Creasy and asks him, "What do you wish?" Creasy turnes to him and says "I wish you had more time." then the explosive he stuck up his ass blows up as he walks away. Brilliant.

Speaking of Fight Club, I always loved how that and The Usual Suspects are two of the only movies in recent memory that you can watch through a second time "knowing" and enjoy it in a totally different way.
So many times when we see a new movie, it's a lot of "been there, done that." A few years ago I went to see some sci-fi movie just for the hell of it. Wasn't expecting much. I had no idea what the movie was about and the trailers didn't help at all. I just knew it was a sci-fi action flick with some dude notorious for his bad acting.
The opening scene is a woman in a room. A bunch of cops rush in to arrest her. Just as they about to handcuff her, she does some crazy ass kung fu moves, runs on the wall and hangs in mid-air before finishing her jumping kick.
You could feel the electricity in the theater. Everyone in the room knew that this was not going to be another "been there, done that" movie experience. We knew we were going to see something new and exciting.
Too bad they fucked up The Matrix sequels. Helps me sleep better at night if I pretend that parts 2 and 3 never happened.
