When last we see Dany, her dragons are big enough to eat sheep, and Drogon is bigger than the rest. She rides on his neck for a short period (She's still only like 16 or so; very tiny). Iirc, he gets tired, so he's not quite big enough to ride, and certainly not by armored knights and shit like that. But he's getting there.

Most dragons grew to be more or less the same size, at least "back in the day." But as it got closer to the present time, either due to being hunted or some other unexplained reason, dragons only got smaller and smaller before they all went extinct.
Probably because they had become overhunted, but maybe (pure speculation) Dragon's growth was linked to magic and as for some reason, when magic left the world, dragons started dying off.
Or its dragons dying off that powered down the magic.
Or maybe they're completely unrelated and it's just a coincidence that blue mage dude said the magic came back stronger than ever at the same time Dany's dragons were born.

Heres another side note question. Since everyones telling me how great the next episode is going to be. Whats everyones favorite moment of the current season so far?

For me its hands down this monologue, because this entire season has made me a bigger Jaime fan than I already was. All of my feels in this scene @_@
