Not watching b&w is more offensive. M, Metropolis, Passion of Joan of Arc, Ali: Fear Eats the Soul, Raging Bull, Rashomon... holy shit the best movies of all time are b&w. And Clerks! The original. I still like it a hell of a lot more than the sequel. The stripped down, low budget B&W helped make that shit.

I like The 5th Element too. It had John Neville in it in a small roll but still. He played Baron Munchausen which leads me to some of my underrated movies:

The Adventures of Baron Munchausen - Great movie.
Equilibrium - omg the fight scenes = crazy
The Black Hole - old school disney and one of the 1st disney films to have a pg rating
The Watcher in the Woods - another old school disney movie
By Dawns Early Light - cool war movie
Mother Knight - AWSOME war movie

Way of the Gun - Ex-Mr. Witherspoon & Benicio del Toro. I enjoyed the hell out of this movie

I dunno if this is underrated, it could be but I wouldn't bet on it. Was awesome though, especially for the fight scenes. I was on a DMC kick at the time, so seeing someone do two-some time was pretty awesome.

Also +1 for Fifth Element, that movie was fucking amazing. Multi-pass motherfucker.

Dr. Strangelove or How I learned to stop worrying and love the bomb. Black & White and from the 1960's. This movie should be required viewing for anyone with some sort of political interest (Hell, everyone in general.) All the scenes in the conference room are gold. Kubrick knew how to do a damn good satire.
