FFVII's by far. I used to leave it running when I had to do chores like the dishes or vacuuming. I can still see Barrett's glare looming at me from the middle of the screen.
...That damned glare...
I kind of liked FFXII's. Mostly because they sort of parodied it.
Music-wise, it's hard to beat FFXII's.
Gameplay-wise, FFXI and FFXIII because I can't stand silly victory poses.

Anyway, FF8's is pretty boss. This is gonna sound homo, but I liked FFX-2's, simply because they'd say some pretty stupid shit in the end of some fights. At the time, some even made me laugh.

Nothing was wrong with X-2s fanfare if you weren't aware about the previous tradition and overall I like it but I can't shake the commentary that it does sound like something out of Gran Turismo.
I'll take X-2 over XIIs fanfare. Everyone knows the best track XII had was the Esper Battle anyway. Well that and Lowtown.
Since VII has been mentioned and is one of my favorites, I'll throw Crisis Core's version of the fanfare along with FF8.
As an off shoot of this, my favourite 'Game Over' music was from FFVIII. It's just so nice and peaceful lol

Soundtrack itself is a gem for ringtones. Short tunes are good enough, and can just go ahead and crop favorite parts of longer ones via iTunes.

VII was a favorite but I still remember IV simply because the fist pump was a good way to get the victory dance going. VII is a game I still play at work on my PSP during downtime and the music after a successful battle is what keeps some of the memory going (except when I also have to listen to the radio, which has gotten me in trouble a few times x.x)
