2 questions
1) how do i set mp3's as my message alerts
2) is there a way to change the background on the actual menu (not background)
Go into the Music app, hit the menu button, should be an option "Set as ringtone". This'll add it to the list for ringtones and alerts. Ringdroid app will let you cut parts of your mp3s down if you don't want to use the whole thing.
As for my recommendations:
Shazam is awesome, mentioned above
SMS Popup allows you to set custom notifications, vibes, LED colors & blink patterns, and also allows you to set different ones for specific contacts. Will also pop up the message instead of having to go into the messaging app, but that's obviously up to you.
Twidroid is a must-have if you use Twitter at all.
NewsRob if you use Google Reader at all.
NESoid is a solid NES emulator
MotoTorch LED is a flashlight app, uses the LED instead of white-screen
Dolphin for multitouch browsing and gestures, though they're adding that to the standard browser soon. Can also claim itself as a desktop or iphone browser so you can get different versions of pages. Does a bunch of other stuff too but I can't remember what lol.
FiOS Mobile Remote if you have FiOS TV, can use the phone as your remote over wifi.
I like Swift more than Twindroid but it annoys the shit out of me that Twitter doesn't have their own official one.
Ear-Ringtone/volume/connectivity profile app for easy changing.
Where-local gas prices and other shit
Forgot the name but my wife has made use of it 3 times already, If you lose or misplace your phone and happen to have it on silent/vibrate this app will allow you to text a pre selected phrase to your phone and will turn the ringer on full volume so you can find it, very helpful if you occasionally misplace stuff. Sure someone here knows the app name.
