rule of thumb when someone is having a night-terror or sleepwalking which is what she was doing if she was actually asleep when she stood up is DON'T wake her up. You'll make the emotion she is feeling even worse.
Just take a few steps back and make sure she isn't going to hurt herself, only intervene if she is about to. When she calms down then wake her up and make sure she's alright.
It can help if you know how to do it gently, try to give her some calming imagery to focus on, if they're freaking out and asleep, change the subject "do you see that kitten?" or "wow, look how pretty those flowers are", the discontinuity between what you're saying and what they are seeing in the dream will often either wake them up, or switch gears in the dream.
My chick talks in her sleep all the time, I just strike up a conversation with her, actually guided her through a semi-lucid dream once, had her fly around, grab a handful of a rainbow, fun shit like that.

i have a friend that is a fucking push-over with women lets them get away with all kinds of crazy shit, then one day BAM they left a plate out and he freaks out like they fucked another man.

Rather my g/f have a dream that I beat her than having her dream that I died atleast twice a month.
lol@ some of the posts on here, but it does sound like she has some sort of issues there for sure. I usually have dreams where I'm beating the crap out of people I'm angry at.
If it's just a one-off I'd say put it down to dreams being random. If it starts to happen frequently then start looking for a reason. There's both physical and psychological reasons dreams can get fucked up. Aside from stuff already mentioned for example hormones affect dreams as well, mine went absolutely bat shit crazy when I was pregnant and that's normal. For me they were nothing excessively violent or scary though, just very life-like action film type dreams but I did punch my husband in the ribs a few times accidentally when fighting my way through some ninjas or Bond villains or something... I have to say though they were some of the most fun dreams I ever had. Apparently it can also happen when you go on/off the pill or change the type.
