Where did it say Warrior-Mage? I thought Yoshida said it's a Warrior in the Live Video.
I've seen in multiple places that he said "Warrior-Mage" when he held that art up... Bleh, I don't feel like digging up the official translation to find out for sure... :/

I think Yoshida is going to change the abilities and spells that two mages get and the next big update, and even the jobs update itself, might have story around why the disciplines changed. I mean they put in lore for why the damn mobs got bigger despite it obviously being a design choice change. The world is going to be radically different in a years time from now, and much like WoW Cataclysm, expect the changes to have stories that accompany them and give reason to them. They could change the story to reflect a falling out within each guild about how their 'practice' has changed focus based on the needs of the company and the war ahead. Conjurors begin focusing more toward the healing arts to help their wounded soldiers and soothe the minds of the feared. With Ul'Dah the Tham's guild could easily start focusing on the more destructive side and they start to learn arts that were originally beyond their discipline to meet that end.
Basically I don't think people should get too fixated on the 'lore' aspect of what makes each class what they are from this point forward. They have shown no qualm about changing the lore to fit the need of even a minor change. Not necessarily retconning either, just changing the circumstances so it fits the new focus.
Is this big post people are waiting for just for gatherers or does it include battle and crafting as well?
As far as I know, they haven't actually changed any lore whatsoever. They are just guiding the story in a certain direction to make sense of the big changes they are planning. It's a sort of retcon. You can expect a solid effort to make sense of changes to come from writers of any Final Fantasy title... and not just backspacing some lore and filling it back in.
It's for gathering, since JP's are up in arms about it pretty much. Hopefully we get that damn action rehaul thing soon too though.

Regarding those enemey mounts: incoming QQ when players discover the eyeball merely hovers over the ground and is not an actual flying mount.

Reinheart finished his translation of the Gathering info. It was clearly aimed at the Japanese crowd that was getting upset at the lack of info on the future of that discipline (from the live letters) so he wanted to take sometime and personally address the issue. He basically said what was already hinted at or at least assumed from previous interviews but he went indepth of his thought process on why the 'level a class, experience all story content' had to change. (One of the main thorns that the Japanese community was up in arms about since they thought that was one of the central tenants to the original game that they started playing).
Basically all disciplines will have their own content and stories, but the battle classes are going to be ones going forward that will do the more 'epic' story sequences. He apologizes to the people that wanted it closer to the original vision but said this is the path the game will take for the future.
Anyways the new stuff that came from it is they are adding EXP chains to both crafting and gathering classes. Also Gathering (And maybe crafting) will see the usage of tp and mp added toward future ajustments. Gathering nodes will have more readily available info and will level up with the character using them. As you level up new items get added to the pool of a given node till that person caps out on that grade. Thus a better sense of progression for levels. You will be able to see during the approach phase exactly what items can be obtained at a particular node. Furthermore rare/exclusive items will move around. How I understood it, if you want to get a specific item you need to hit the right node at the right time to have it available. It won't be just a 'random chance' at getting something rare, but if you want to farm something rare you will need to quickly go from node to node till the item appears in the approach table.
He also made a quick post in regards to housing. He wanted to make housing the primary focus for progress for the crafting and gathering classes (their end game). Players can make houses using bought materials, but the bought stuff would be very limited, and only crafters can actually customize it beyond the base form. Gathering would supply unique materials for use during the housing system. Also reiterated the idea of a garden to make gyshal greens and a stable to breed chocobos in.
Other new info is possibly making a workshop under the housing system and in this place people can collaborate on large scale crafting projects. He referenced making a ship and an airship as possibilities but said the workshop would not launch with 2.0 and was something scheduled beyond it.
All of the discussion about how the nature of the coming jobs will clash with the class lore we have so far just makes me all the more disappointed that they didn't just fucking make new unique classes.
