In XI it was more acceptable to "not bring sets with you" because you had to go back to town to change jobs anyway; if you were choosing to leave a set in your MH, it was something like your WHM melee gear or your THF RACC gear.
In XIV, no one wants to be forced to choose between their BLM MACC set and having to go back to town to switch to BTN. There's a huge barrier there.
We have multiple gear sets. Calm down chicken little. You probably shouldn't be using multiple gear sets for the same job anyway. Just use 1 gear set and if you need to switch out gear for macc or whatever, you can just macro that in, thus saving a gear set for another class.
Also, in XI going back to town to change jobs/gear was a pain in the ass that could take upwards of half an hour depending on how far you were from town. In XIV 2.0 it's a non-issue. You return/teleport back to town, do your shit, and teleport back. Costs you chump change in gil and takes almost no time.

I don't know if there are plans for it but why can't SE just add retainer storage access at all camps? That way you just have to go to the nearest camp to get these rare sets rather than back to the city. Considering how fast travel is in the game going back to a city is hardly an inconvenience like it was in XI anyway.
Actually, they've made it out to seem, in my opinion (and possibly in interviews), that they will be allowing you to summon your retainers out in the field, or at least manage them somehow remotely.

Not sure how you can "realize" how many sets we "would've" gotten. And I encourage you to ask yourself how many sets would be used by more than 1 class before assuming that every single job/class available is going to require 8 sets of gear around all the time.
I can assure you that Botanist won't require more than 1 set and guess on how many classes you're going to use that same set?
Melees will also share very similar sets with some changes depending on how good their job specific gear will be. I think you're trying to apply FFXI logic into this game and it simply doesn't work because it's not designed to support gear swaps. The amount of sets will greatly depend on the content that we have no way to guess or know until launch so screaming that this is an issue right now is entirely useless (especially with a system redesign coming over).
I actually had two botanist gearsets in 1.0 (max perception Grades 1~4 & max perception while maintaining 8 swings on Grade 5), but I agree with your point as a whole.
Also consider it looks like you won't be able to change jobs once inside an instanced dungeon so that plus a decent amount of gearsets it shouldn't be an issue.

I can't fully respond to this without breaking NDA. Suffice it to say that unless there is a significant change in the primary way sets are created, your logic has a fatal flaw.
Furthermore, if you're asking how many other classes I would use gear that emphasizes gathering, perception, output, and STR, the answer is... zero? I'm not using STR gear on MIN or FSH. And I can't exactly unmeld STR from my gear to change sets.
Lastly, gear has differing class requirements (and classes have differing stat emphasis), so it's not like you drop your axe and pick up a bow and the same gear just works. The idea that you're going to use one set of gear on different jobs is not really viable.
