Job usefulness always ebbs and flows, we'll only know how useful certain jobs will be for Voidwatch when it comes out. Anything that was good outside of Abyssea only got better. Level whatever you want, at least one of the jobs is bound to be useful.
Crafting isn't really worth it at the moment, save Cooking for food and maybe Alchemy for meds. If it creates consumables there's a market for it. Things like Clothcraft that create gear won't make you nearly as much money. Synergy is really easy to level, and not all that expensive. Kind of dull to do, though. It's something that's bound to be useful, given the way they seems to want to augment old gear. I can't speak for fishing, I've never really done it. It'll make you constant money, though.
Edit: Gil its self isn't as useful at the moment, as most new gear is R/Ex. But you're starting over so you'd need to buy spells and such. Fishing is a good bet, cheap to do and makes ok money. Once you get into abyssea there's a lot of ways to make money, farming NM pops or NPCing augmented gear and such.
