Legit question. I'm super out of the loop with "modern" anime. I know of some of the bigger shows obviously, like CSM, JJK, MHA, stuff like that.
The vast majority nowadays just seems like it's all isekai. Like ALL of it. I've got no use for it. (I know there's a couple decent ones in there, but trying to specifically stay away from the genre)
I started watching Vinland Saga, which is one I am really enjoying. But what are some others? I'm mostly into the more "action" based ones, genre specific I guess Seinen, but there's not a whole lot of them anymore.
Any got some recommendations?

Isekai gets a bum rap. Some do it better than others, sure, but given the industry's current state, hoping for combat-heavy shows with both good plot and visuals is a pretty tall order. Especially if you want any hope of a second season.
That said, put Frieren on your list. It's more of a character-driven drama, but there are action moments.
Shangrila Frontier was fun and could technically be called an isekai depending on how you feel about VRMMO stories.
Solo Leveling had its first season. Manbaby manwha purists weren't happy, but I felt it serviceable. Also a sub-genre of isekai given gate expeditions.
Possibly some others that slipped through my cracks due to shit synopsis or questionable art. I gave Helck a shot, for example, but I found the humor in it absolutely mindnumbingly horrible. Mileage may vary, etc..
Started watching Dungeon Meshi, only two episodes in so far. This might be the most memeable anime I've ever seen. The reaction gifs alone could feed generations.

The mangaka is a heavy cRPG player and the manga ended soon after the release of BG3, people were joking that she ended the series to be able to play more, others we're saying that while it might not have been impulsive, she might have planned the end in advance taking into consideration the release of BG3, just so she could play more
Going to be a trilogy of movies for the Demon Slayer Infinity Castle arc. Can't wait. Should be an epic finale.
Mushoku Tensei s3 announced at the end of this season, as is customary. my guess if the timing is similar is a splitcour fall '25/spring '26
If I want to watch Spice and Wolf, shall I start with the classic series or go with the reboot/remake/remaster?
I know the voice actors in both dub and sub are the same and the new one looks visually more pleasing.
I only ever watched the first arc of it. I just kept hearing increasingly middling things about the other seasons. Accurate?
As a generally not anime guy I just started watching it a few weeks ago, about halfway through The Swordsmith Village arc.
The writing hits every single anime trope imaginable, in terms of purely the storyline I would definitely classify it as "middling"
But as xno said the production value/animation quality for it is fantastic and honestly that alone makes it worth watching
The finale of the newest season had some insane animation moments.
And then it ended in the most hype I've had for an anime for a while.
