    eehhhhh I'd change a few things in that carbonara recipe

    Add egg mixture to bacon. Cook on low and stir with a wooden spoon frequently while pasta cooks. Don't stop too often or the egg will curdle.

    When pasta is done, drain pasta and add to pan with the sauce. Add salt and pepper at this time. Stir for about 3 min, or until the pasta is coated thickly.


    - adding oil to the water doesn't harm anything, but it doesn't help. if your pasta sticks, it's because you're not using enough water to dilute the starch

    chop bacon into bit-sized pieces and cook completely in a stainless pan. do not drain grease. whisk cheese (parmesan/pecorino mix or just parm) slowly into 1-2 whole eggs, not just the yolk. add a bit of pasta water if it gets too thick. do not use milk or creme at all. when pasta is done, remove everything from heat. strain pasta then dump it into bacon pan, off the heat, and combine. add egg/cheese mixture and combine. there is no need to apply any extra heat to the eggs, as the pasta will have enough residual heat to cook it.

    Just adding one more thing to this. Adding oil to water actually does break the surface tension in the water and (if you are using a small pot) will cause the water to not boil over due to the starches in the pasta. It's actually cool to add oil to a pot of boiled over pasta water and watch it subside.

    Also the cinnamon is a very interesting addition to the traditional carbonara recipe. I will definitely be trying it.

    oh yeah, completely forgot that was the one thing i changed up, i definitely held on to the bacon grease. can't let that deliciousness go to waste! next time i do this though, i'll try out your other suggestions, thanks for the tips!

    If you love drinking and sometime wake up feeling a bit rough in the mornings try what half of Ireland eats on a Saturday morning after a hard night's drinking on a Friday or any other given days of the week.

    Crusty White Roll (warmed through)

    Pork Sausage (Difficult to get real thing in US might have to use links)

    Egg (Normally fried sunny side up with yolk runny but do to your preference)

    Optional extras

    Onions
    Butter melted on roll before filling
    Mustard
    Fried tomato

    Very simple to make but delicious after a hard night of drinking and grease soaks up all the alcohol in your system so you're ready for work, life or more drinking. It tastes even better if you can get someone else to make it for you.
