    Truth. What the chickens eat effects the nutrients in the eggs. Not saying to buy the special super expensive eggs but eggs nutritional value vary greatly depending on what they eat.

    Just like what a cow eats effects how its meat tastes (as well as how they are slaughtered).

    Most grocery stores sell cartons of just egg whites anyways if you don't want to deal with all the hassle of separating it from the yolk. Just buy that, cook some scrambled egg whites and add some salsa with vinegar if you want flavor. Bam, easy ass healthy protein.

    Eating raw eggs is just crap people use to do in the 70's when they didn't know any better.

    Or just don't separate the yolk from the egg because there is nothing wrong with eating the yolk unless you're eating too much fat to begin with.

    Alton Brown Protip: Use a spare ice cube tray to freeze the separated yolks/whites for easy baking or cooking in the future.

    But on the OT, you're probably more likely to get some kind of food-borne illness eating improperly washed organic spinach or strawberries than you are eggs. If you want to save yourself the cooking fat just poach or hard boil the eggs. Can even fry or scramble using olive oil. Butter's good stuff and probably won't do any long-term harm unless you're eating more than 1/4 cup of it a day (or get a lot of saturated fats in your diet from eating pre-processed and/or packaged food).

    People here in Japan eat raw eggs all the time. Freaked me out at first but I've come to like it.

    Usually raw over rice, or dipping cooked meat into the egg and eating it.

    Raw eggs honestly don't taste like anything, at least the ones I have had didn't. Just kind of swallowed the egg and shrugged. I might see how much egg whites cost at the local store.

    As most people have commented on the other parts of the post.... Most brands in stores that stay "free range" or "cage free" just basically mean they meet the USDA requirements for "cage free/free range". This usually means that in their 'LARGE' coop, the chicken has access to a small window of "fresh air"...and that they have a little bit of roaming space.

    I don't know where you live, but perhaps you might find a local farm or local person who sells eggs. That is typically best if you want to see exactly what the chickens eat and their living situation (if you really care that much).

    You really shouldn't worry about cholesterol and saturated fat in eggs--if you are getting eggs from a good source. :D Cholesterol and saturated fat aren't your enemies (typically).

    I can't say much about raw eggs though, because I don't really do it.... Although I enjoy runny egg yolks :D

    I've noticed that grocery store eggs have much weaker shells and paler yolks than the eggs I've had as gifts from my aunt, and other people with a few chickens. The free range eggs in the store seem to have slightly stronger shells, but taste the same as the normal ones. The gift eggs had much darker orange yolks, and seemed to taste better, but I have no clue how much more nutrition they had.

    Lots of dishes had raw egg in them when I was in Japan, and I was a little surprised to see the egg get cooked on top of hot rice, but I suppose it's not much different than spaghetti carbonara. Also, I don't think it's the inside of the egg that would have the salmonella or other bacteria. I think the eggs come out pretty sterile, but if the chickens step on them after they've stepped on their own poo, then the outsides could have bacteria on them. I guess rinse off the egg, and try to avoid getting it all over the outside of the shell before you eat it, if you're that worried. I prefer my eggs soft-boiled, personally.

    Actually, chickens can host Salmonella bacteria and never show any symptoms or ill effects. Most bacteria will be in the intestinal tract, however, the infection can move to the ovaries of hens, thus contaminating the eggs before the shell has even developed.

    Also, in comparison to the size of bacteria, egg shells are quite porous. Any contagion on the shell can easily transfer to the interior of the egg.

    Your aunt sounds like she has quality eggs...and raises her chickens well. Those eggs most likely contain more nutrients (in the egg yolks). Can you sell me some prz?

    I raised chickens for 4H for years in middle school/high school, and our eggs were always much better than store bought eggs too. The birds had free run of our property during the day, 3 acres of woods and about 1 acre of garden/lawn. We would always have racoons and opossums killing off a few, but some of the hens would always hide a nest somewhere and come back with babies fairly often to keep the population steady. My mom used to sell some of the extra eggs at work or at church, which paid for the feed we bought to supplement the bugs/grass they also ate. We would also feed them vegetable peelings and table scraps, they were pampered fat birds... I miss my flock...

Real free range eggs are definitely better than factory farmed eggs, though they're probably hard to get if you don't know someone who raises the birds themselves.     You can just stop by farmer's markets. Usually one nearby most places if you look online and ask around. Sometimes they try to charge a shit ton, but more often the prices are decent for what they are selling. I got some spicy pepper plants a few weeks ago for pretty cheap.

    Ya there are farmer's market everywhere. I was surprised they even had them in SoCal, but they just have a different spot they go to everyday.

    Note two things about farmer's markets:

    1. I've had pretty consistent success with haggling with them, so if you're willing to try it, go for it.

    2. If you live anywhere remotely close to a filipino community at all, make sure the word "Balut" is not listed anywhere near the egg.

    They love that shit. Thankfully, my hubby told me what balut was way before I started going to markets. But I see signs all over the place at the market for it so...ya gotta be careful lol.
