From what I remember, everything is the same except additional bosses to fight that are ridiculously cheap. Might be a few things I'm forgetting though.

I liked 7 and 8 too. FF9 remake would be money, but FFX was the first game I accidentally beat because that shit was on training-wheels difficulty level lol

Mine was 6 :O Will never regret it's mid level difficulty in this life. However, I've given up on SE ever making a proper remake of FF anything 1-6 (3D style, all the trimmings.)

10's storyline was definitely memorable however, quite possibly because of the then new aged omg-voices-in-my-RPGs acting.
