Well both titles are out in a little under two weeks on the 27th, and for once in the US they come out on the same day.
The US versions of the 360 Marketplace and PS Store have demos for each up. I had a chance to play a bit of each, and while I definitely need to play both demos more to have a real sense of each title... here are my thoughts.
FIFA 12 - At first I abhorred the new defense changes. At first it was just such a strange change. For those unfamiliar, they have added a new 'Tactical Defense' system. Now before I go any further, don't worry... you can set the defense style to "Legacy" in the settings and forget they ever added it. This can be done everywhere EXCEPT ranked online matches.
In a nutshell, you no longer make a mad dash at the opponent with the ball and magically strip it away from them. You can no longer hold the Dash + Pressure + Teammate Pressure buttons and just double team the opponents into giving up the ball.
The Contain button (replacing Pressure) now does just that. Instead of rushing the ball at the players feet, you contain the player and your player does not get closer than about 1-2 feet from the player when Containing them. To actually strip them you have to press the Slide Tackle (X) or Standing Tackle (B) buttons. It should be noted that the B button is also postition sensitive. If you are behind or beside the opponent that has the ball you will simply pull on their shirt or shoulder charge them.

Again, you can disable this, or even switch the buttons around so that your slide tackle and player contain buttons are mapped the way they were in 11. This is what helped me immensely. I don't want to ignore the new system at all, I would rather re-learn the game as that would be far more interesting. It is growing on me.
As for the other elements, the entire game feels FAR more dependent on possession. Obviously with it being much harder (maybe just at first) to get the ball from the other team that is going to be true. But in addition the game feels more open, it feels easier to keep possession as well. The AI players make smarter moves, the passing feels much better to me as well. In 11 the 'smart passing' meter never really felt like it was working. It seems to be in this one.
I will play more for sure and these opinions may change. At this point though I just don't know if I want this Day 1 like I have the past two years.
PES: This got less playtime and I blame that on the fact that the demo doesn't make it easy to start a new match after the first. You get more matchtime in the PES demo, but once the match ends and you choose to return to the main menu... you are locked into watching a demo clip reel showcasing the new features. What are you gonna do? It is a Demo!
Overall though, it definitely feels less ... uhh... clunky? They have sped things up a bit, and once I changed the button config to match up to what I am used to with FIFA / Legacy PES I was set. Passing still feels way better to me in PES. It just feels like I can get a pass to go where I want and to who I want. Great leading passes, defense splitting passes, etc.
It is still slower over all than FIFA, and you just cannot hold the ball with one player for long without getting smooshed and left in the dust. So passing is key.
Overall, I am sure that I will be a fan of the Become a Legend again which has yet to disappoint. I definitely need to play this demo more though, only a couple matches doesn't give me a very good perspective.
