Slightly boiled and then fire-roasted corn cut off the cob and mixed with shredded carrots. Buncha lite mayo, green sriracha, lime juice and a 1/4 cup of shredded cheddar. I don't know what to call it but I'm tentatively going with corn and carrot elote.
Prep work. The pork was a standard cast iron start and oven finish. Salt, pepper and garlic powder.
Why'd you ruin that corn by taking it off the cob?
Because I had 8 cobs. Needed to cook em all.
I did 2 of them traditional elote style but I wanted to make this salad kinda thing so I could bring it to work today. :D
We've got a CSA thing through my fiancee's work. We got 4 ears yesterday and ate them all. Biggest ear of corn I've ever seen. The first I had was as big as my forearm.
Got some prime hanger steak again for a great price. Currently marinating with sriracha, lime juice, salt, pepper and lite soy sauce. Gonna sear the shit out of it along with some shallots. Gonna put it on a bed of roasted carrots.

I wouldn't mind the char, but it's a little rare for my liking. I'm a medium rare guy.
