Made another one this morning, smaller only 6oz. I cannot believe how good it was.
London top round is definitely my new go to steak.
I don't like the texture on London broil myself. I prefer skirt steaks or the usual good eats like rib eye, strip steak, porterhouse, etc. Of course, filets as well, but those are a rare treat for when I buy the whole tenderloin and cut it into single steaks.
Same as I do all steaks, I just prefer cuts with minimal fat (I know, I know, blasphemous. Whatever).
Sit it out until it reaches room temp. Heat cast iron skillet on stove on high heat and turn broiler on and have rack 1-2 notches from top heat source. Rub steak with olive oil, salt, and pepper. I do a pretty hefty amount of pepper because it gives a nice texture when seared on, sort of like a tasty crust. Sear steak for ~30s or so on each side on pan that is on the stove and then transfer pan to oven and do 2-2.5 min first side and 1.5-2.5 min second side depending on thickness and desired level of done.
For a 1" steak 2 and 1.5-2 will get you nice and rare. For closer to 2" steaks go with 2.5 and 2-2.5 to get rare.
Put on plate and wrap plate with tinfoil. Use tongs or some other not-sharp object to transfer from pan to plate. Let sit for 15ish minutes before cutting into.
Edit: the cut I had this morning had almost zero fat on it whatsoever but with the juices and the seasoning it managed to be amazingly savory with a nice taste of salt and pepper. It was so fucking good I was licking the juices off the plate.
I forgot to take pics but I have a rack of spare ribs in the oven right now at 225. Gonna go 5 hours then broil those fucks.
