Cheap cut of beef (chuck roast) marinated w/ red miso. Sous vide for 36 hours at 135F. Chilled then charred with wood fire. Medium rare throughout, and melts in your mouth :D

Didn't feel like doing anything super fancy last night. Marinated some skirt steak in soy sauce, sesame oil, brown & white sugar, garlic, and some green onion for about 3 hours. Made some white rice and mixed in some sauteed onion, garlic, peppers, and mushrooms.
Grilled the steak, sliced it thin (after resting of course), and laid it on top of the rice with some sriracha.

I've been running in circles kinda busy so I've been eating a lot of stir-fry. My marinade is pretty similar to yours except no sugahs. I have a few pics sitting around, I'll post them when I get home.
NOM to all that. Zen , I'd love to get the marinade recipe you use that has no sugar if you would share.
I've been cooking up a storm as we aren't eating out but will have to post pics later. Lately on the menu :

dark soy, hoisin, sri racha, ngouc mam, garlic, onion
Salt, pepper, garlic, lite soy, a touch of sesame oil. I add cayenne or chipotle sometimes.
I also use apple cider vinegar and whole grain mustard almost every day.
I like to do soy, Mirin (sake works too just don't use the fake mirin. Technically this is sugar but it's like a sweet wine so not a lot and not refined sugar), enough ginger to give it some kick and then something else spicy like a chili sauce/paste or cayenne. Sometime garlic but gotta mess with the proportions so they don't overpower the garlic. Usually use the sesame oil during the stir frying of the veggies though putting it in the marinade sounds interesting too

Ive got a bottle of mirin for that pork ramen recipe I want to make. I'll try using that next time over the sugars.
Put everything in blender:
-Miso (red miso preferably, but any kind will work)
-Rice vinegar (couple splashes)
-Soy sauce
-Sesame oil
-Sake
-Ginger
-Garlic
-Scallions
-Any combination of soft herbs you like (parsley/basil/tarragon/sage/chervil/chives.. etc)
Miso has tons of natural MSG in it so it will taste really good, and rice vinegar complements heavy meats like beef, and also works for fish. Can use the marinade recipe for sauce as well, but you have to boil the marinade to cook off the alcohol first.
Miso is the best umami.
