Made a roasted bone-in pork loin last night with some black bean salad and couscous. Rub was a mix of sage, rosemary, and thyme with some garlic, salt and pepper to season it. Processed with olive oil into a paste and rubbed om. Seared on a cast iron pan for 2-3 mins per side, then put in the oven on 325. Pulled it out when it reached 145 internal temp.

I wanna sous vide another pork roast and get a great sear on it. I flubbed that last one a bit.
Veggies are black beans, tomato, red and yellow peppers, red onion, and a little jalapeno with some feta cheese.
Made fish tacos last night based on this NYT FIsh Taco recipe.
Used wild caught sole for the fish, otherwise kinda followed the recipe. Salsa you can pretty much wing it and do well by tasting afterwards. Usually use a whole large tomato (like beefsteak big), 3-4 slices red onion (chopped), 1-2 cloves of garlic, small handful of cilantro (if you want it), salt and pepper to taste. I'm not a big fan of mayo, so I used more sour cream than mayo for their sauce.
Overall really tasty. I could eat many of them. Was thinking pickling red cabbage with some red wine vinegar a bit would be nice.
I'm on this taco train. I've been using cod and just putting it in the sous vide with various spices, lemon juice, and a tiny bit of oil. Been in a rush recently so I just open, slap on to tacos and put on chopped red/iceberg, hot sauce, and tomato.
Salsa is definitely the key. Add some.hot sauce and some lime and you've got some tasty shit. Can skip the sauce.
Not to mention salsa takes like 5 minutes to make.

Speaking of fish tacos, or tacos in general, you guys should DEFINITELY try al pastor seasoning (idk if seasoning is the right word but w/e). The sous chef at a restaurant I used to work at used to make that stuff for me, I still have dreams about it.
I'm not sure what that seasoning would be. I believe al pastor is pork tacos where the pork is marinated with pineapple and maybe orange?
Not sure what spices they actually use. Will have to check it out.
