Prep for braising chicken thighs for quesadillas.

Right before I chucked it in the oven for 2.5 hours. Sadly there are no pictures of the quesadillas themselves because GF and I were starving. I ended up using too much liquid and tossed the rest of the shredded chicken back in to make mexican chicken soup. Spicy and delicious.

Break fast today. Two eggs, started on high in a small pan. Flip, add tomato sauce, grate cheese on top, cover for 3 minutes and plate.

I've got two hours and a new set of knives, what should I make tonight?
Thinking of baking or roasting something.
Bacon wrapped asparagus and some kinda starch.
Mexican quinoa:
1 cup corn
1 can beans
1 can fire-roasted tomatoes
1 cup quinoa
1 cup veg stock (or chicken, I used chicken)
1 jalapeno (I used bell pepper because lazy and don't like dealing with the oils, added cayenne for heat)
2 cloves garlic (I left this out because my garlic had gone bad and I didn't want to go to the store again)
1 tbsp olive oil
1 tsp chili powder
1/2 tsp cumin (I left this out; I'm not a cumin fan. added a bit of oregano and tumeric though)
salt/pepper to taste
optional: avocado slices, lime juice
add the olive oil, fry up the garlic and jalapeno until fragrant. add remaining ingredients, bring to a boil. reduce heat and simmer 20 minutes, covered, or until quinoa has absorbed all the stock and is translucent in the middle.
end result: okish. what I would change: definitely add the lime juice and avocado. definitely add the garlic. also would add some onion next time. I would also rinse the quinoa first; I didn't know you were suppose to do this and it has a bit of a bitter coating otherwise.
all in all, for the effort/price/health I will definitely try this again with some adjustments.

I tell ya what. That may be my best avatar ever.
Been super slacking on posting but decided to sous vide some bacon as crazy as that sounds. Forget the exact temperature but ends up being 8-24 hours and with all the fat that melts off basically becomes a slighlty lower temp pork confit. Makes the frying a breeze since a lot though not all the fat that was going to cook away anyways is removed before frying so less popping and crackling all over the place. And it's already cooked so takes only a minute or 2 depending on taste to get it nice and brown, and you don't have to deal with all that curling annoyingness. Also only really have to do 1 side most the time to get the nice browning
So for fun took a pic of the bag of grease after taking the bacon out to give an idea of all the grease
On right are ones I did both sides. Pretty standard crispy but not that break your gums dried out crunch. Basically the way I've loved bacon all my life with less risk of burning
Ones on the left are mostly single side/slightly less time. Still completely firm and crisp but could still bend a bit without breaking and on the outside but inside is juicy and melt in your mouth goodness. This is the future of bacon gentlemen
Ignore the pancakes they just some protein packed Kodiak cakes. Pgood especially for something all natural except with whey isolate <.<. But still just premixed stuff
