I'm with Zet on that one. Never use butter for a steak. The seasonings and temp (medium rare) is all I need to make it great.
Maybe. I still control calories like a mother fucker though so it's usually just a little something on the chicken or such. And something as calorie dense a cream sauce where how much you happen to reduce can have huge effects on such make me too nervous to remake it each night lol. But yeah my stomach can take it. I put heavy cream in my coffee for example.

While the steak is searing, add some garlic butter and make that shit delicious. Once in a while tho, you give up like 3 months of your life everytime you eat it.

This. And sauté those mushrooms in the garlic and butter and slather that shit on top. Pour the meat and butter drippings over your potato or maybe even make a simple pan sauce from it
Really though butter gets a bad rap. It's not really all that bad for you at least compared to other fats/oils

We sear him in the finest canola oil and then deposit him in the Instant Pot with onions, unsalted beef stock, Worcestershire sauce, a drop of vinegar, more salt, and more pepper.

I'm not real food saavy, but any recommandation of something that can slow cook/pression cook/Steam cook?

Use the ANOVA. It's not a steam cooker, but it's basically what you're looking for. Throw your meat with seasonings in a bag and let the water cook it slowly to the correct temperature. Always done, never overdone (unless YOU fuck it up).
Can scroll back in the thread and see the results these guys post. Unfortunately I have to pass on it for now. Need $$ for the new house and I think I have to buy a new A/C for the time being. Sleeping in an 80 deg room is terrible.
