It's pretty good. The complicated recipe is this:
Cold brine for 2-3 days
Smoke, if possible.
Sous vide for 18 hours
Chill it back down
Portion it
Finish in a pan.
You can skip the smoke.
The simpler method is to skip the brine, use an Asian braising liquid and go for 10-12 hours at 170 degrees. Chill, portion, finish. Bonus points for sticking it in a homemade steamed bun.
It'll still be pretty good.
I keep saying I'll post pics from the smoker but I keep being lazy and forgetting. However, my wife is going to have her first attempt at making bacon from scratch. When she does we're going to document everything so we know what works and what doesn't. We're pretty excited for this experiment!

So I make chicken breasts a lot that I sous vide, don't finish or sear, toss in fridge and turn into chicken salad as needed.
Well I got two breats in the fridge I won't get to before I leave for vacation so I was going to toss them in the freezer. When I go to turn them into salad should I just defrost either normally or sousvide defrost or should I bring them to eating temp and let cool like they were just made?
I thought one of the big perks of sous vide was that you could throw food straight from the freezer into the bath, add an hour to cook time, and be done with it.

That's one of the benefits.
Boyiee - Toss it back into the bath at the same temp you cook it at. 1 hour. Eat.
Note: Don't refreeze AGAIN after the second cook.
My thought is do I even need to put in warm water or can I just do 40-degree water or the refrigerator to defrost since I'm just making chicken salad with it?
Yeah huge perk is throwing it straight into the freezer and back into the bath but I haven't done it with cold food and I don't know why it seems like it might be different. Also it's in the fridge for a couple days before going into freezer.
Have you tried 40 degree defrost sous vide it's amazing. Also wine chilling.
Made pizza last night. Couldn't decide what kind of pizza I wanted, so I wandered through the produce section for a bit.
Decided to take some broccoli raab and shallot.

Then I saw they had nice thick bacon as I wandered through the meats.

Put raab on only half the pizza cause the wifey does not like it much. I had cooked the shallot and raab in the bacon fat cause I didn't feel like using another pan.

You just don't know the glory of the raab.
That looks excellent and probably a billion times healthier than Pizza Hut.
Maybe if I didn't cook the shallots and raab in bacon fat first. I'd say the pizza I normally make definitely is. I don't generally cook the toppings in bacon fat first. On Sunday I made it with just shallot, beets, honey, and goat cheese; no sauce. That one is also really tasty.
I am fortunate enough to have lived my life surrounded by great pizza. The greatest pizza. I'm even about that ham and pineapple life. I never liked Raab. Can't do Raab. That fried egg life in France/Italy is the tits though.
