Don't overnight the pineapple marinade it'll turn the meat too mushy!

Did you do the chiles with the liquid in the can, or just the peppers themselves?
First one. I use the whole can and then blend with my immersion blender. Makes a hell of a sauce but it's a bit thick with the chunked pineapple in it and stuck to the meat a little too much before grilling. I'd recommend pineapple juice instead.

Yeah also I'm extremely space limited and no dishwasher so not having to switch contents to/from blender would help. Though that reminds me I really need to break out the newer one I bought to see how well that works first lol
Yeahhh...immersion blenders are like hand mixers with blender blades attached instead. Super easy to clean, but might seem like too much work if you're a lazy chef coming home from work.

My dad got a new smoker pictured below, so I'm going to take his old smoker because the one the previous owner of our house left is an electric smoker. I'm not sold on the idea of an electric smoker.
My wife's 30th is this month on the 30th, so we're having a BBQ on the 2nd. I want to try smoking some pork belly "burnt ends" based on this recipe. I'll let everyone know how it goes. Debating if I should try it with a smaller slab beforehand or not.
I would DEFINITELY try it beforehand to get a feel for it.

For my part:
I was in DC this weekend and went to a barbecue. The guy manning the grill kept fucking spraying lighter fluid on the goddamn charcoals and flaring it up. Every single piece of meat, burger, and hot dog STUNK of fucking fluid. I took one bite and threw it away. Also told the pregnant lady there that she should avoid all of the meat as well.
What a fucking letdown.

I guess I should order a small slab of pork belly then, and get some other stuff while I'm at it. There anything in particular you recommend from that ranch you order from, Zet? I was thinking of trying their Kielbasa, and then just getting some ground beef and maybe skirt steaks.
The short ribs are legit. All the steaks are delicious. The ground beef is good. The sausage is just good. Haven't had the kielbasa though. Their pork roasts are great. The beef roasts are great. The whole chickens are REALLY good. I would grab a belly and 1 of a bunch of stuff to find what you like. Everything does arrive frozen so keep that in mind for defrosting purposes.
Cool, thanks. I'll definitely grab some short ribs since the wifey has been asking me to make my short ribs since we put the stove back in. Their whole chickens are so expensive, though. Can usually get a whole chicken for 1.29/lb or so, but they're looking for 4.29. I was actually thinking of getting their butchered chicken with 2 breasts, legs, thighs, and wings, but that's more expensive.
Frozen is perfect. I can't tell if my freezer is a deep freeze situation, or if it's just ridiculous. I've frozen meats, dairy, bread, etc. none of it has that freezer burn texture after defrosting.
I fucking love my electric smoker.
Their chicken is worth the price IMO.
I told my wife I wanted to do porl belly for her birthday and now she's telling me she wants me to make pork belly bao from scratch, steamed buns included.

That's a metric ton of work. For 20 people? May as well charge by the plate and call it a restaurant.
