Does anyone have a list of helpful/useful links for someone who hasn't had time to play beta but is looking to understand the basic game mechanics (i.e. how regular/elite skills work, explaining game terminology, etc) before release?

Everything will be wiped before release, also server transfers will be free at the start until people settle in.

Are you able to wear pvp armor in normal PvE? Or at least make normal armor look like the pvp armor? I see some pretty sweet looking pvp armor and would like to wear it everywhere

No you can't but the skin would most likely be available somehow in PVE from dungeons or questing. Same goes for PVE armor, you cannot use it in sPVP. Unless its WvW which uses PVE rules.

Any place in the stress test to preview the pve armor? I assume the pvp locker is pvp only

No way to preview like that but it will be the same armor skins, the name of the armor would give you a clue as how to obtain in PVE. Its handled differently also as stats available in PVE are a bit different. Preview in PVP should give you all you need to know for now. I am sure there might be PVE specific skins and maybe PVP only skins going forward but for now no one really knows.

I'm assuming that if you login using the same info across both accounts they're definitely linked. No idea how to check otherwise.

When I made my gw2 account at the step where it asked for my gw1 account I put in my @ncsoft account and it said it was invalid so I had to put in my regular email address which I believe is somehow linked to my ncsoft account but yeah.

If your account was linked correctly there was a hall of monuments in your achievements that shows your correct ranking
