The grocery store where I moved has a butcher and a meat department and where you have to pay for meats before going back to the store. I paid $8 for a steak. It was the smallest one there. It was also the biggest steak I've ever had in my life! The steaks were huge. I wanted to go all out, but there was no way I would be able to deal with any of the other steaks.

You don't even need to visit a dedicated butcher to do this. Going to the meat counter at a supermarket, picking out a cut of meat, and asking them to ground it for you probably gets you a package of preground beef plus slime, as they toss your cut on a refrigerated shelf in the back and pick up one that's already packaged for sale. "This asshole, how much does he fucking think I make? I have shit to do today," the employee mutters to himself as he waits in the stock room for what seems like an appropriate amount of time to be grinding meat.

Personally I raise and butcher my own cows for this reason. My neighbors don't appreciate the stench, but they can eat slime and die.

Do you select a cut and ask them to freshly ground it for you, or do you purchase it already ground? If the latter, it can also have pink slime in it. Butchers aren't magically exempt from this, as it is put in ground meats as a filler. Only if you're absolutely sure that your meat was ground from a filler-free source can you say that it doesn't contain fillers (as that doesn't have to be disclosed on the label).
