Mint is great. I even like putting chocolate mint buttercream icing on cakes.
I can't taste cilantro (not that it tastes like soap, I just can't distinguish its flavor), so I have no real opinion about it. Some complicated tastes are actually caused by retronasal breathing (air from your mouth going up into your nose), and olfactory receptors are notoriously unique. IIRC the difference in cilantro perception (good vs. soap) is caused by a point mutation in an olfactory receptor.
Edit: Googling tells me that the research that implicates an olfactory receptor directly is pretty weak. It seems more likely to me that the differences are developmental.
If watching cooking shows has taught me anything, it's that you can put anything into an ice cream maker if you're determined enough.
That's true. You can steep pretty much anything into an ice cream base before straining it and churning it.
Speaking of cilantro, just got some salmon for lunch and it was covered in a cilantro lime sauce that wasn't on the menu.
