then they're either prepared wrong or too ripe/not ripe enough etc

if a tomato tastes 'mushy' or anything less than tart and has a slight (for lack of a better word) ashy texture (like a bad macintosh apple versus an awesome granny smith) then it's not a good tomato

as for avocado, take it home, keep it in a paper bag, unrefrigerated -- it's trial and error but you'll get used to how firm/soft it should be (lord knows you probably juggle avocados all day anyway)

anyway, barring that, if you don't like avocado maki at a non AYCE sushi place, then you are bonkers -- try the green dragon roll, it's amazing
